Authentic Enchiladas Verdes

This is a really good recipe! I followed the directions precisely but the sauce seemed a bit too thin so I added more tomatillos. Great flavor in the sauce. My only complaint is the chicken had that standard boiled taste to it, I used 4 boneless/skinless breasts. Next time I will put the chicken and other ingredients in my crockpot and then mix in some of the sauce before I roll the tortillas. This should get rid of that flavor I dislike. Other than that, this is a great recipe

Charley's Slow Cooker Mexican Style Meat

Sooo Good! Definetly shred the beef and then put it back in the crockpot for at least an hour so that the liquid absorbs into the meat. I defatted my liquid in between shredding the beef.

Quick Chicken with Asparagus and Provolone

This was excellent. The only thing i did different was to use just a half a can of chicken broth and add the asparagas towards the very end not to overcook it, then add the cheese after you turn off the heat. I also added a slice of ham over the chicken since i had some leftover from Easter. De-lish!

Oven Roasted Red Potatoes and Asparagus

Great recipe. I doubled the potatoes but reduced the rosemary and thyme. I marinate the potato mixture in a bag for about an hour before putting in the oven. Make sure the potatoes are pretty much completely done before you add the asparagus.

Slow Cooker Stuffing

Fantastic! Definently start out with using just 2 cups of chicken broth, the condensation from the steam will keep it moist enough to almost not need any more broth. The only thing i added was minced garlic to the veggie saute.

Bachelor's Creamy Pumpkin Soup

This is an easy and very tasty recipe. Made a few changes. I used low sodium chicken broth instead of water and half/half instead of cream. I warmed this on the stove and then put it in the crockpot for a few hours.The chicken broth seemed to make it a little salty so I added a mixture of cinnamon/sugar to it and discovered that it is the secret ingredient that took this soup to the next level.

Brown Sugar Meatloaf

This is an excellent recipe! I followed the directions with the exception of a few changes. I used top sirloin ground beef added about a tbsp of minced garlic and used italian style bread crumbs instead of saltines. I also mixed the brown sugar (1/2 cup) and kethup together and spooned over the top of the meatloaf prior to baking. Fantastic!! You'll want to place loaf pan on a baking sheet for the juices to overflow onto. I drained the loaf pan about a third of the way through baking to cut down on fat. Everyone loved this recipe!!

Seven Layer Dip I

This is a fantastic recipe! The only change i made was in seasoning the ground beef. I added a little chili powder and some cayenne pepper. I also added a some garlic powder to the guacamole and it gave off and amazing flavor! Definently a crowd pleaser, and very tasty when made w/o the beef too!

Kelsey's Favorite Stuffed Green Peppers

Very tasty! I made a few changes. I blanched red peppers rather than boiling green. I also used brown rice instead of white and I added a few shakes of cayenne pepper to the mix. As suggested I added an additional 1/2 jar of spaghetti sauce I had and it made the filling just the right consistency. Excellent!
