About this Cook
I have a great job but it sometimes make it hard to cook on a regular basis. My husband is a helicopter pilot that does fire suppression all over the country. My job is to drive the fuel truck and refuel the helicopter. It's a very exciting life but we live full time in a motorhome and never in the same place twice. Needless to say I have a very small refrigerator and oven and almost no countertop space. Oh well...who doesn't love a challenge!
My favorite things to cook
Meatloaf (it's my husbands fave), banana bread, zucchini bread, soups and stews and cookies too!
My favorite family cooking traditions
Cornbread dressing on the holidays and blackberry cobblers....YUM!
My cooking triumphs
Anytime I don't burn something and it turns out edible I consider that a triumph! Actually, I'm pretty good at baking cakes and cookies. Too bad I can't eat those for every meal.
My cooking tragedies
Still can't make a good gravy, pie crusts or dumplings...I'm apparently FLOUR challenged....arrrgggghhhh!

Big Soft Ginger Cookies
Ummmm...all I can say is "WOW"! Made just like the recipe and they came out perfect. Best gingerbread cookie recipe ever! Thanks for submitting.

Janet's Rich Banana Bread
This recipe is very easy and wow does it taste great! It's moist and flavorful! I did add a bit of cinnamon and cranberries and mashed the bananas but it would have been great just as it was written. Thanks for a wonderful recipe. I will be making again soon!

Zucchini Saute
Very easy and tasty! I sauteed the veggies until they were a little on the carmelized side which made the dish have great flavor. I didn't change the recipe at all and I loved it. I just added salt and pepper to taste at the end. I will def make this one again!
