Chocolate Sauce

** This recipes makes WAY more than 1 cup ** - And I'm not offended by the excess either. It's a simple recipe. I used half & half instead of water (because I had it and it needed to be used up). I didn't actually boil it for the minute it stated either. So far it looks like it will turn out well.

Tuna Noodle Casserole from Scratch

I made a few modifications, which is sort of expected I guess. My mushrooms were not usable, so no mushrooms. I grated some carrots up and put that in. I used panko crumbs and nearly doubled it as I had an extra tablespoon of butter to use because I didn't butter the dish (which is totally not needed, it came out of my Corningware dish pretty clean). I think next time I'll grate a little more cheese and add it in with the noodles. I'll also add more onions, carrots and peas. The sauce was very simple to make (and was what mad me use this recipe). :)

Best Chocolate Chip Cookies

Okay I've since remade these and I'm putting it at 4 stars. I would agree with others on lowering the amount of sugar. Mine are a little granular so I think 3/4 cup of sugar will be what I use next time. This recipe has also yielded 3 dozen cookies so far and I think I can get another dozen out of the dough in the fridge. That said I like the way the cookies turn out much better after the dough has spent the night in the fridge and then allowed to warm up enough to be easily scooped up with a teaspoon.

Raspberry and Almond Shortbread Thumbprints

I have regular looking flat cookies with blobs of my homemade strawberry jam in the middle of them sitting on my stove now. I don't have almond extract so I used vanilla, and I wouldn't think that would impact it. I also used freshly milled soft wheat for my flour (which I used a few hours prior for pancakes that turned out just fine). If these don't at least taste decent I'm going to be really ticked about using a whole cup of butter on a recipe that is worthless. And yes, I popped the cookies into the freezer before I baked them like other reviewers had mentioned.

Buttermilk Pancakes II

I gave it 5 stars despite 2 changes I made. I used only 1/3 of the recipe as there are only 4 of us in the house, two of whom are 5 or under. I saw 3 cups of flour and buttermilk and knew that it would be overkill. The 1/3 of a batch made six ~5" pancakes. The other change I made was using fresh milled flour. I used 1/2 cup of hard white wheat, and 1/2 cup of soft white wheat. It turned out wonderfully. I'll be adding this to my recipe box for later use. :)

French Bread

Clearly you can add me to the "must have done something wrong" list. I've made bread before and NEVER had results this bad. My bread isn't even out of the oven yet and I knew before I even put it in that this was going to be a bust. It rose nicely up until the end and then it went flat. I even cut it prior to rising the last time as a reviewer mentioned. I think I'll stick to Artisan Bread in 5 Minutes a Day. At least then I knew my less than thrilling result (but nowhere near as bad as this) was due to improper handling of the dough.

Pizza Dough I

I admit I used olive oil and not vegetable oil, and since I didn't have enough all purpose flour for the 2 batches I was making I used 2 cups of whole wheat flour in each batch with 1 cup of all purpose. I ended up only using one batch of dough for pizza anyways, and it's all gone already. It turned out very nicely. So I'll be keeping this recipe. As for the other batch of dough.. I ended up baking it for about 25 minutes in the bread machine since it was in there already for mixing. It's an absolutely wonderful, although somewhat dense, loaf of bread. It's not overly dry on the outside which has been a major problem in the 2 weeks since I started using my bread maker. Thank you for this recipe, and the unexpected loaf of bread I got from it. :D

Bangers and Mash

We ate the whole pan. I loved it. It's a little labor (and pan) intensive for such a simple dish, but totally worth it. It's a wonderful comfort food for sure.

White Bread For The Bread Machine

This is going to be the only recipe I use from now on. I had tried a few others since I got my bread machine a week and a half ago but every time I ended up with a hard crust. Not this time! I used the light crust and basic settings and it came out perfect. The only change I made was I used turbinado sugar and not white sugar, which isn't a huge change really. Excellent recipe thank you!

Best Bread Machine Bread

This recipe isn't bad, but for some reason both loaves I've made have turned out too hard. The second loaf I added 1/4 cup more water and took it out as soon as It was done cooking (which frankly defeats the purpose of using my bread machine). The second loaf turned out a but better, but still not as soft as I would like. I gave it 4 stars because it is a simple recipe, and does make good tasting bread.

Homesteader Cornbread

I followed the recipe just as it said without making any changes, and I like it just how it is. Yes it's a bit dense, but delicious none the less. It's a very easy recipe too, which I always like since I can't spend a lot of time in kitchen. Having chili for dinner tonight for sure (maybe lunch too!). :D

Creamy Potato Leek Soup II

I only gave it 4 stars since I didn't do it exactly as the recipe states. I omitted the bacon, added more leek, and more potatoes. I also added salt and pepper to taste. I loved it though and it's a wonderful soup for cold winter days. I'll be making this for a long time to come.
