Greek Pasta with Tomatoes and White Beans

This was really good. I didn't really follow the recipe, but I really appreciated the idea. I sauteed onions and 3 cloves minced garlic in some balsalmic vinegar. I added half can of diced tomatoes and let simmer for a bit. I thawed some spinach in the microwave and drained. I added half can of navy beans to the tomato sauce and then the spinach. I served over brown rice pasta and sprinkled feta on top. Excellent easy satisfying vegetarian meal. Thanks for the recipe.

Grenadian Spice Cake

I took this to my supper club for latin night. I made it as written except I substituted coconut milk for the regular milk. Also sqeezed a key lime in. Baked for 55 min in a bundt pan and sprinkled with powdered sugar. Was a big hit at the supper club. Nice and moist, pretty dense with a crispy outside. Used the Passion Fruit Mousse recipe as a "topping". I didn't like it together but others did. I think it was great with no topping. I would make this again.

Brazilian Passion Fruit Mousse (Maracuja)

This was slightly addictive. I made this using one can of frozen Old Orchard 100% Juice Apple passion mango juice and omitted the sugar. It was really sweet. Next time, I might double the cream to offset the sweetness. I refridgerated for about 5 hours and it was almost set. I recommend overnight as the others did. Brough to my latin night supper club and everyone loved it. I did use it as "topping" for the Grenadian Spice Cake. Would totally make again experimenting with different frozen juices. Would love to try it as an ice cream. So Easy!!!

Argentine Chimichurri Bread

I took this to a supper club. I followed the directions except I replaced the wheat germ with Quinoa (I could't find wheat germ). I then used the dough cycle on my bread machine and then made 24 rolls. I let them rise for an hour and they didn't move! I cooked them anyway as others suggested. I was very disappointed in my hockey pucks. I hope it was just my yeast? Was it the Quinoa? However, lots seemed to enjoy the flavor of my hocky pucks!
