Peanut Butter Cookies IV

(reviewed by my 14 yr old son) Fantastic, I skipped the final coating of sugar and instead added chocolate chips. The cookies I made were big and they cooked perfectly at 11 minutes. This is an easy recipe that would be great on any cold winter day.

Amazing Pecan Coffee Cake

Loved it! It was very light and moist. I followed the recipe exactly, baked for 35 min in a 9x 13. I did cover the top with foil for the last 5 min to keep the topping from getting too brown.

Debdoozie's Blue Ribbon Chili

Excellent recipe! I have made it twice now, and while its very good the day its made, its even better the next day! I drained my beans before adding them. I also like to add extra garlic powder and cumin to taste. If you can't find light kidney beans, substitute chili beans. I added a half can of Rotel tomatoes/peppers last time and it gave a nice kick. This is my new go-to chili recipe.

Favorite Old Fashioned Gingerbread

Excellent! I followed others' suggestions and doubled the spices and added a half cup applesauce. I covered it with foil after about 30 min and baked it for about 50 min. Served with homemade whipped cream.

A-Number-1 Banana Cake

Loved it! Baked in a 9 x 13 inch glass pan and topped with vanilla cream cheese frosting. It was very moist. Used sour cream instead of buttermilk because I didn't have any.

Eggnog I

My family always looks forward to October when we can find egg nog in the stores. Now we can make this all year long! I used egg beaters in mine. Delicious!!!! Can't wait to make it again for Christmas Eve!

Chocolate Brittle Surprise

I made this for a party last night and everyone loved it. I baked mine for about 12-13 minutes and pulled it out when the brown sugar mixture was a dark golden brown. After taking the brown sugar/butter mixture out of the microwave, it took several minutes to stir the melted butter all the way into the brown sugar. Be sure to take the time to do this--it almost looked like a paste after I got all of the butter stirred in. If you still have butter floating on top, keep stirring. Can't wake to make these again!

BBQ Glazed Homemade Meatballs

I've been making this recipe for many years and thought it was my family's secret recipe! Imagine my surprise seeing the same recipe online. We always serve it with cheesy potato casserole. Line your pan with foil for an easy clean-up. I normally use skim milk instead of evaporated milk because that's usually what I have on hand. Great recipe to serve to company.

Special Delivery Chicken

This was pretty good, but had a very strong sour cream taste. I think the addition of some seasonings (garlic, salt/pepper)or maybe some chopped celery or sauteed mushrooms would go a long way. I rate this 3 stars as is, but it could be 4-5 stars with some modifications.

Buffalo Chicken Dip

Love it! I used boiled chicken, 1 c. hot wings sauce, blue cheese dressing instead of ranch, 1 1/2 pkgs softened cream cheese, and omitted the cheddar. I haven't even heated it up yet--I'm eating it cold and its fabulous! Can't wait to try it heated through.

Creamy Rice Pudding

I've made this 3 times now. Delicious!!The past 2 times, I've cheated and made it in the microwave because I didn't want to stand in front of the stove for that long. I cooked it about 10-12 min until thick, stopping to stir every 3 minutes. Then I added the final egg/milk mixture and cooked another 1-2 minutes. The pudding's consistency seemed the same to me, and it was a lot easier.

Blackberry Cobbler

Great recipe! I added a splash of vanilla and some cinnamon to the batter, then sprinkled sugar over the berries before baking. I have a similar recipe I also make which calls for a large can of sliced peaches and their juice to be spooned over the top instead of blackberries.

I have made these several times, always with super results. Sometimes I drizzle powdered sugar icing over the tops when cooled. Try adding blueberries, dried cranberries, or lemon zest for variety. They taste great with a cup of coffee!!

Almond Maple Granola

This is so good! I have made it twice--I used pancake syrup the 1st time, and real maple syrup the 2nd time. Real maple syrup is much better, although it is still tasty even with pancake syrup. I also added pecans to the recipe and only used a 7 oz bag coconut.

Bacon Wrapped Chicken

This was delicious! To make the bacon crispy, I cooked it in the microwave first for 2-3 minutes before wrapping it around the chicken. I also added a dollop of sour cream and several pieces of cooked bacon to the sauce. Will make again!

Beer Bread I

I use a honey wheat beer from a local brewery. I used a darker beer, once, and the flavor was too strong for our taste. After putting the dough in the loaf pan, I pour 1/4 to 1/2 c. melted butter over the top, then let the dough rest for 10-15 min before baking. I cut this into cubes and serve with a jalapeno sour cream dip at parties, and it always disappears.
