Irish Chicken and Dumplings

First time to make chicken and dumplings and they were great. I did make a few changes as well. I used two cups chicken broth, one cup water, one can cream of chicken and one can cream of celery. I cook the chicken breast in all this all day in the slow cooker, then add the onion, celery, carrots, potatoes and peas and cook for about an hour. I only used two potatoes. Its wonderful!!!

Simple But Awesome Lemon Pepper Pork Chops

I was not crazy about this recipe. If you are not careful, the juices will drip out of the package and into the oven which causes a big smoky mess. I would put a cookie sheet or something underneath to catch the drippings. Still, it didn't have too much flavor, even after adding more seasonings before cooking. Would not make again.

Artichoke Chicken

Pork, Cashew, and Green Bean Stir-Fry

Unbelievable recipe! This was absolutely easy and great tasting! I have never made Chinese food before and this is just as good as eating it at a restaurant. I used salty cashews and brushed them off and didn't toast them, but it was still wonderful. Next time I will boil the green beans for a little longer than five minutes.

Enchiladas

Wonderful enchilada recipe and very easy too! My husband said it was his favorite mexican dish that I have made so far. The only suggestion that I have is to somehow soften the corn tortillas before adding mixture because mine ended up breaking, but it was still good. I will try with chicken next time.

Pasta Pomodoro

This was a very light and flavorful pasta dish. I would not recommend using 2 8oz. of pasta. I used 12 ounces and it was still too much. I also used 2 cans of diced tomatoes instead of the fresh and drained it since it calls for chicken broth...I didn't want it to be to soupy. I served it with the feta chicken recipe from this website.

Feta Chicken

I thought this was very good. I did drizzle some melted butter on top before baking and I had to bake it for about 40-45 minutes. It was still very juicy. I served it with pasta pomodoro (from this website).

Garlic and Ham Spaghetti

I have made this a few times and really love it. It is so easy to make, throw everything in a pan and sautee. I omit the olives and find it not necessary to toss with olive oil at the end. Wonderful and easy!

Baked Teriyaki Chicken

Absolutely wonderful! I used chicken tenders and cooked them for 15 minutes, basted them on both sides and then cooked for another 15 minutes. They turned out really juicy and tender. I also lined the pan with foil for easy cleanup. I used a little less sugar than what was called for and 3 cloves of garlic. Superb!

Skillet Ham, Cabbage and Potatoes

I too, used about a half cup of chicken broth instead of water and I cooked the potatoes and ham in a skillet with butter before adding to the cabbage. It was really good!

Chicken Cordon Bleu I

This was a great recipe! The only thing I did differently was dipped the chicken in melted butter and rolled it into the bread crumbs. I think this keeps it moist. It was really yummy!

Black Pepper Beef and Cabbage Stir Fry

I was sort of let down by the outcome of this recipe. I thought it was real bland, even though I added more soy sauce. I would also recommend cooking the bell pepper first for a few minutes and then adding the cabbage because it takes longer to cook. The cabbage ended up being wilty and the whole meal took to long for what it was worth. It was edible, but would not make again.
