Apple Squares

As a personal preference, I made it without any nuts. When I make this again, I'll put a whole cup of apple in (it seemed like coffeecake, not apple) and decrease the topping. About 50% of the topping "stuck" to the batter, the other just falls off after it was baked. With those changes, perfecto!

Creamy Potato Leek Soup II

I didn't have enough potatoes to make the recipe as written, however I went ahead since I had too many leeks! I used turkey bacon and 1% milk to cut down on calories/fat and it turned out really well. I left the peels on my potatoes as well, just as a personal preference. I'll make this again with my changes!

Pumpkin Cookies I

With my alterations to the recipe (below) we loved this cookie, which was much more muffin-like than a normal cookie. They were delicious with almost a whole can of pumpkin, half wheat flour instead of all white flour, more 1.5 cups of brown sugar, half of white. Delish, thanks for the base recipe!

Easy Lasagna I

Great base recipe! I exchanged turkey burger for the ground beef, as well as adding various peppers and other veggies I have on hand as healthy additions. I also pre-mix the cheeses with the eggs the day before for a more cohesive mix. Love this recipe!

Cherry Crunch

I made this for a vegan family member using vegetable oil and it turned out well. I recommend reducing the cook time if using veg oil instead of butter. Overall a great recipe!

Buttery Cooked Carrots

To make this a 5-star review, I drain all the water from the pan and then add the margarine and brown sugar. I sometimes half the brown sugar with Splenda to save calories.

Peach Ice Cream

I have used this recipe for both fresh peaches and fresh strawberries. My only complaint is that it gets a little icy, even after churning. Maybe that comes from too much liquid in the recipe? I have halved the recipe both times, as my ice cream canister does not hold that much liquid. Leaving it to chill overnight has been a great third step to the simple first two. I have also made the some changes to reduce fat and calories, but the taste still remains awesome. For my halved recipe, I use: 3 eggs, 1.5 cups white sugar, 2.25-2.5 cups of fresh fruit, 1 cup heavy cream, 1.5 cups half and half, .5 cup skim milk, 1 tsp vanilla extract and .25 tsp salt. After I puree the fruits and mix the other ingredients in a seperate bowl, I pour all into the blender to get a great concoction before pouring into the canister. GREAT recipe!

Gourmet Chicken Pizza

This is a great base recipe! I add other veggies before adding cheese. Green and red peppers are normally my base veggies, instead of onions. I also add red pepper flakes while cooking the chicken to kick up the heat. Lastly I add some fake/real bacon (whatever I have on hand) to add some extra flavor.

Broiled Tilapia Parmesan

Since I have found this recipe, I haven't made tilapia any other way! However, I have made the following alterations to achieve the best-tasting dish: reduce lemon juice to one tablespoon, reduce margarine to 1/8 cup and add one tablespoon red pepper flakes. Thanks for the great base recipe! Who would've ever thought those ingredients would go so well together?!

Pumpkin Bars

I have made these bars twice. Both times in a round angel food cake pan. The first time I was just using up some leftover pumpkin. With less pumpkin, these came out very moist and almost uncooked like, but delicious. The best way to put it, is that these were pumpkin pie without the crust. The second time I made them, they came out cake like. Varying the measurements helped create the different consistencies. I also used brown sugar instead of white sugar, both times I made this. Overall a great recipe :)

Parmesan Mushrooms

I used these mushrooms on top of some fettucine alfredo. Although they were good, I will not make these guys again. I would rather just have sauteed mushrooms.
