Meatloaf and potato casserole; Burgers and hot dogs, potato salad, fruit salad, baked beans, veg with ranch dressing for our 4th of July get-togethers to watch the fireworks; Mother's Day dinners with Mexican theme or Soup in bread bowls, or baked potato bar; also love massive salads with loads of bits in them
My cooking triumphs
Worked for awhile at wedding decorating and catering; made many wedding cakes, but the carrot cake is one of my favorites, as well as an Italian cream cake recipe, a Maraschino cherry cake recipe, and a lemon drizzle cake recipe
My cooking tragedies
Have had a few dishes that didn't turn out well, but not that I would call "tragedies" in recent history. One many years ago though - my very first wedding cake. A friend and I were making the wedding cake for our 9th-grade English teacher who was getting married for the first time at the age of 72. We offered to make the cake as our gift. (15 years old) The cake was a traditional 3-tiered white cake with red roses and green vines twisting all over it. We had the cake nearly done and ready to deliver - 2 hours before time - and the red and green icing began turning WHITE! The colors were bleaching out because of the cheap shortening we had used. So, we quick mixed up another batch using Crisco - ALWAYS FAITHFUL brand - and pulled off the faded ones with toothpicks and redid the flowers and vines. We were able to attend the wedding and deliver the cake on time. Sadly, the marriage didn't last long, but the cake was remembered for years to come, by us and the bride. She loved it!!

Banana Nut Bread III
Love this recipe!! Easy, quick, and has oil instead of shortening. I also added some dried cranberries & blueberries to one loaf. Lush!

Fruit Pizza II
I wanted a less-sweet version, so I baked a ready-made pie crust sprinkled with a little sugar - then spread the filling into the crust, following the shape of the crust. I placed sliced apricots all around the outer edge, then a little stack of blueberries held into place by two rows of sliced strawberries standing on end. I filled the center with the blackberries. Then, I put a ring of raspberries around the edge between the blueberries and the apricots. After glazing, I added a large dollop of whipped topping in the center. The combination of the fresh fruit, the sweet glaze, the cream cheese filling, and the crisp pie crust turned out to be fabulous! This is the perfect summer dessert recipe!
