Eclair Cake

I followed this recipe exactly and turned out awesome. I even used fat free cool whip. The frosting I melted in the microwave for 1 minute at 1/2 power and just poured it over the cake. Next time I will go for lite or fat free graham crackers and see how that works out. I actually made it on a Tuesday and did not serve it until Friday. My guests loved it. It tastes exactly like a chocolate eclair! This is a keeper for sure! Thanks for the awesome recipe!!!

So Good! I also used the vanilla cool whip, and subbed Irish cream for water. Rich chocolately and fantastic! Super easy to make.

Meatball Cookies

These were very tasty and fairly easy to make once I got the dough to the right consistency. I did not have ground cloves or the all spice, I added extra nutmeg, ginger, and cinnamon to try and make up for the cloves. They came out great. When glazing the cookies I gave up on using a teaspoon to spoon it over the cookies, I just started dipping the cookies right in the glaze ended up being much easier. My Italian mom has been making these for years and she said mine were very good. Thanks for the recipe!

Coconut Cream Pie I

I made this for Easter, a few people thought I had bought it. Everyone who tried it loved it, I didn't try it just don't like coconut, so I'm taking the other's opinion on this one. I used a graham cracker crust, toasted the coconut, and used 2 small packages of the coconut pudding. Will be making this again, thanks for super easy crowd pleasing recipe!

Pumpkin Bread IV

This came out so moist. I too doubled the spices, did not have cloves so I just skipped it. I had 2 cook two loaves for an hour that were in glass bakeware and one loaf I had in a metal pan took about an hour and 10 minutes. Served it to guests on Halloween, everyone loved it. I also subbed applesauce for the oil. Great recipe I will be making this one every year around this time of the year! Froze 2 of the loaves, think I may be defrosting them soon!

Maple Walnut Pumpkin Pie

I bought all the ingredients with full intentions of making this and taking it to my sisters for Thanksgiving but after talking to her we decided to eliminate it because we had too many desserts coming. I made it for our weekly family dinner instead. The request has been made to make it for Thanksgiving! This was absolutely delicious, if it wasn't for my daughter not liking the nut part I would never make a plain pumpkin pie again. This was great, don't hestitate make this one. I used Fat Free Eagle brand sweet and condensed milk, I baked it an extra 10 mins before adding topping it seemed too watery in the middle. I'm not sure if that anything to do with the fat free or not but it was great!

The Best Rolled Sugar Cookies

Absolutely delicious, I did use 3 cups of sugar and 2 teaspoons of vanilla. I ended up refrigerating the dough for about three days though, just because I forgot I had made it. I had no trouble rolling out the dough. I just sprinkled powdered sugar on my rolling surface. My girls and I had a blast making these. Great recipe, Thanks!

Sugar Cookie Icing

Excellent and very tasty, I did add extra milk and powdered sugar to get the consistency that I desired. I also used lemon extract too, I used this on the Best Rolled Sugar Cookies from this site. My girls and I iced the cookies on Thanksgiving morning while we watched the parade. I plan on making this a Thanksgiving Day tradition using this icing recipe. Thanks for the awesome recipe!

Neat Sloppy Joes

Anything that makes my daughter ask if she can have another portion of something after she takes only a bite or two gets 5 stars! I followed the recipe to a "T" except I did not add the celery, because of my kids. Mt husband ate at least 4 sandwiches. Great recipe, definite keeper.

Sauteed Apples

This was very good. I pretty much followed the recipe, I just added about 1/2 teaspoon of nutmeg, also 1 teaspoon of vanilla, and I upped the cinnamon to 1 teaspoon. I think next time I may cut down the butter to 2 Tbl, I'm thinking I won't miss it! Served with vanilla ice cream.

Ultimate Party Meatballs

I made this for my New Year's Eve party last year they were a hit. This is a definitely very easy crowd pleaser. I keep the ingredients instock year round just in case of emergency. I have made this at least 3 x's now always a hit.

Traditional Mashed Potatoes

Excellent, didn't change a thing. Since I've been married mashed potatoes have been my nemesis, I could cook elaborate meals but the mashed potatoes always were a flop, not anymore, these are perfect!!! I use this exact recipe for everything now that requires any kind of mashed potatoes, I use it for the pan pierogies from this site and my Sheperd's pie, makes those dishes great.

Spinach and Strawberry Salad

I made this last night and my family loved it. I did cut down the sugar as others suggested as well. I didn't have sesame seed or poppy seed and no one seemed to miss them. I will definitely add some type of nut next time. Great recipe thanks!Update 6/9, I have made this several times now, always a hit!!!! I add 1 can of drained mandarin oranges as well as 1 cup of nut topping, never disappointed!!! Update 5/8 added craisons this time was great once again!

Easter Eggs

Everyone who tries these loves these. The peanut butter ones are better than a Reeses Egg! Never tried the coconut just don't like coconut. I made mine small about the size of of walnut, I used a teaspoon to help me make the egg shape. I will be making these every Easter.

Lime Meringue Pie

I also just made the meringue it was fantastic and super simple. Update 2/20 I just made this again but just the pie part, i only used 4 egg yolks and 3/4 cup lime juice and 1/4 lemon juice, baked for 25 mins was absolutely fabulous! Thanks for the awesome recipe can't wait to make the meringue and pie together in the near future!
