Smothered Green Beans

I pretty much followed the recipe except for I did cook the beans before adding them with the bacon. Also I drained most of the bacon grease and just added a splash of olive oil to the finished product. Was very good. Also followed the tip about using kitchen shears on bacon made it super easy.

Spinach Brownies

This was good. I followed others suggestions and sauted the onion in about 1 Tablespoon of olive oil and added about 1 1/4 teaspoon of minced garlic. I also didn't boil the spinach I just placed it in the skilled after I sauted the onion put a lid on it and let the spinach wilt that way. I totally omitted the butter. I also used fat free mozzarella, I think next time I may use a cup of mozzarella and a cup of cheddar it will probably add to the taste. This is definitely a good base recipe!

Eclair Cake

I followed this recipe exactly and turned out awesome. I even used fat free cool whip. The frosting I melted in the microwave for 1 minute at 1/2 power and just poured it over the cake. Next time I will go for lite or fat free graham crackers and see how that works out. I actually made it on a Tuesday and did not serve it until Friday. My guests loved it. It tastes exactly like a chocolate eclair! This is a keeper for sure! Thanks for the awesome recipe!!!

Chickpea Salad with Red Onion and Tomato

This definitely needs to be made the day before. I tried it a couple hours after I made it and thought this is bland, I served it next day and was pleasantly suprised. It definitely needs time to soak in the dressing. I served it to guests and got compliments on how good it was. I pretty much followed the recipe, just made a few additions, I threw in a medium sized cucumber, and a tablespoon of balsamic vinegar.

Brooklyn Girl's Penne Arrabiata

I give this one 4 1/2 stars, it was really good. Those girls in Brooklyn can really cook! I made it for my 4th of July party and it was a hit. I made it without the chicken, because I was grilling so many meats, I thought we needed something without meat. This definitely hit the spot, all my guests loved it. Nice easy recipe that I will be making again.

Penne Pasta with Spinach and Bacon

This is always a hit at my house. Very easy and very tasty. The only changes I make is that I use an entire pound of pasta, 7 slices of bacon, and top with grated romano cheese. This is a great recipe!

Apricot Chicken I

This was a hit in my house even my daughter who usually doesn't eat meat liked it. She asked to have it for dinner the next night also. I used an 8oz bottle of Russian Dressing because that was all I found, only 1 packet of onion soup and the 10 oz of apricot preserves. I also used about 8 chicken breasts and still had a lot of gravy. I only baked it for 45 minutes and it was nice and tender. Thanks for the quick and easy recipe.

Golden Pork Chops

If you are looking for quick and easy. this is it! I only used 4 pork chops thin cut. So I scaled down the recipe only used 1 can of the soup and 1/2 an onion, still had lots of gravy. I cooked for only about 25 mins covered and then about 12 minutes uncovered.

Lemon Square Bars

These were good had to cook them a little longer than recipe suggested they were still soggy in the middle. They taste good. Update: 6/21: I made these again for the last time have decided to try another recipe, I just can't seem to get the middle baked right. I end up losing all the ends and sides of the pan because it burnt. I've tried the foil halfway thru cooking still feel I lose too much of the pan due to burning.

Bow Ties with Sausage, Tomatoes and Cream

This was a great recipe. I pretty much followed the recipe as is. I only added 2 tsp of minced garlic (personal taste preference), omitted the olive oil felt that the grease from the sausage was enough, used low fat cream, and topped with romano cheese. My family loved it. My husband had several helpings.

Mom's Cucumber Salad

This was good, but may be a little too sweet. I will use less sugar next time The recipe makes a lot of dressing. I had halved it and used 1 1/2 very large cucumbers and had tons of dressing. I added another 1 1/2 cucumbers and still could have added more cucumbers.

Penne a la Vodka II

This was really good tastes exactly like a dish I get at one of my favorite restaurants. I used diced tomatoes and only 1 tsp of minced garlic(personal preference). I also added about a bag of spinach which I wilted with the water from the penne. I loved it. Thanks for the recipe
