Potato Salmon Patties

I made this using left over mashed potatoes. It was delicious. I used two cans of salmon, red pepper, shallots, Italian seasoning and Italian breadcrumbs. Sauteed shallots, red pepper in olive oil and the juice from the salmon. Added the salmon and broke it up. Spiced with Italian seasonings. When shallots were softened added to 2 cups of mashed potatoes and mixed. Added Italian breadcrumbs until a bit dryer and two beaten eggs. Mixed well and covered. Put in fridge for 30 mins. Made patties then and rolled in breadcrumbs. Cook in olive oil in frying pan until golden on both sides. Delicious. Actually froze 4 of the salmon cakes for another meal.
