Beet Salad with Goat Cheese

So delicious! I made enough of the separate ingredients for leftovers, but ended up eating two big helpings. Made a great dinner, filling and flavorful! I will definitely keep this recipe around to make again.

Pasta e Fagioli III

I was certainly impressed! My only regret is that I should have made only a single serving of pasta and added pasta as I went along--I am only one person, and there is a ton of leftovers! Really tasty, though. Hearty, delicious, and not "beany" like I feared! Yum!

Peanut Butter Balls VIII

These are easy and amazing. They are so delicious and filling, a wonderful snack to keep on hand! I made a batch and stuck them in the freezer. I'm going to make another because they are delicious!

Pumpkin Chocolate Chip Muffins

Really delicious. I've also made this without chocolate chips. It's easy to double the recipe so you can use a whole can of pumpkin. A great winter breakfast!

Slow Cooker Pineapple Pork Roast

Quick and Easy Pizza Crust

I used to waste money buying pizza crust mixes, but not anymore! This is so fast and easy that I can whip it up on a weeknight, add my favorite toppings, and bake. Excellent!

Easy Apple Cinnamon Muffins

Good recipe, but required major modifications. This recipe makes 12 muffins easily. If you don't want burned stuff on the bottom of the oven, don't fill the muffin cups all the way. I didn't make the topping because I had so much batter already for the muffins. I think next time I'd make a little less or even make two batches of 12 so I could use the crumb topping. Also, unless your apples are small, 1 apple is plenty.

Creamy Butternut Squash With Cinnamon Soup

Very lovely! I didn't measure the spices properly so I ended up with a bit more kick in my soup, but it's not bad at all... just a little bit of warmth for cold winter nights! Quite delicious.

The Best Banana Bread

Simple and delicious. I ate this all week for breakfast! I used real butter instead of margarine and I'd highly recommend tenting the top with foil if the rest is done but the top is not. Also, don't bake too long, moist banana bread is a winner!

Lentil Tomato Soup

Really great! I used diced tomatoes instead of the whole canned tomatoes... this came out really thick, like a stew. It was hearty, comforting, and tasty. The lentils and tomatoes were really mild, but the addition of cloves and nutmeg added a complex flavor. Best of all, this inexpensive recipe will give me leftovers for weeks to come!

Gourmet Mushroom Risotto

Fantastic recipe! I made a few changes. My dad had morel mushrooms so I added those, butter from a previous sautee' of more morel mushrooms, and most of the other ingredients in the recipe. Really, really good. My first risotto, and my family loved it!

Chicken Scampi I

Excellent recipe! I tried this on my family. They are picky and some (my mom, who has celiac) have special food needs. Well, I was greeted by some clean plates and my dad said that after I move out, I'll have to come back some time to cook for them! I served this over gluten free penne (for mom) and angel hair pasta (for everyone else). It was also really easy!
