Cabbage Roll Casserole

I liked this recipe. I saw other people said the recipe was bland and watery. I used half the amount of beef broth and seasoned the beef with salt, pepper, and worcestershire sauce. I also sweated the onions with some garlic.

Curry Chicken Salad with Grapes

I liked this recipe. I gave it 4 stars because I substituted low-fat plain yogurt for the butter. I will definitely make this again. I might try it with craisins or perhaps dried cherries.

Best Cream Of Broccoli Soup

I really liked this recipe but I used Farmland Skim Plus Milk since that was what I had. Next I will use whole milk since fat adds a little extra flavor. I also added garlic powder to give it a little oomph. Will definitely make again.

Tuna Macaroni Salad

Great recipe! Makes a great lunch or dinner on a hot summer day. The only changes I made was that I cut back on the onion a little and added some shredded carrots. Maybe next time I'll add some peas.

Black Beans, Corn, and Yellow Rice

I doctored this recipe so I'm only giving it 4 stars. I added some sauteed onion and minced garlic. I omitted the lime juice and cumin and used a packet of Goya sazon with cilantro. Really great side dish or vegetarian meal.

Fresh Tomato Pie

Great recipe! As others suggested, I sauteed the onions a bit first and peeled and seeded the tomatoes. The crust still got a a little soggy but I think I'll lay the tomato slices out on paper towels next time. I also added a little garlic powder to the mayo/cheese mixture.

Roasted Brussels Sprouts

Brussels sprouts were never my favorite veggie but this recipe has changed my mind! I added some garlic powder to the oil mixture and roasted them for 15 mins at 425 degrees.

Fried Rice Restaurant Style

What a great base recipe. As others have noted, it's important to use cold, leftover rice. I stir fried half a diced onion with the carrots and peas. I also threw in diced smoked turkey sausage because I happened to have it around. I didn't have sesame oil but I added a little oyster sauce to taste.

Slow Cooker Split Pea Sausage Soup

Really great recipe. I gave it 4 stars because I used 8 cups of broth rather than 10 (we like a thicker soup) and I used diced ham instead of the kielbasa since that's all I had. Next time I'm going to sweat the onion and garlic a bit and use kielbasa.

Peanut Butter Noodles

Great recipe! I gave it four stars because I didn't have green onions or peanuts and I augmented the recipe a bit. I used Sriracha instead of chili paste (1 tsp to start; season with more if you like it hot). I also put it in the fridge after it cooled to room temperature. I garnished it with shredded carrot and cucumber (seeded then chopped).

Slow Cooker Chicken Parisienne

Simply wonderful! My husband, who tends to like spicy, tomato-based sauces, loved it. I did what others advised and uncovered the slow cooker and set it to HIGH for the last half hour of cooking to allow the alcohol evaporate. I served over buttered egg noodles with parsley and steamed broccoli with a few squirts of fresh lemon juice.

Quinoa with Chickpeas and Tomatoes

Great recipe! The only thing I did differently is that I toasted the quinoa in the sauce pan in 1 tsp of the olive oil for 5 mins before adding the water. This decreased the cooking time to 15 mins; this gave the quinoa a nutty flavor. Next time I'll add chicken as another reviewer suggested.

Simply Lasagne

Great basic recipe! I did tweek it by adding garlic powder, oregano, and basil. I've never made lasagne without cooking the noodles first. I was worried that the noodles might be tough but they were perfect.

Easy Garlic Broiled Chicken

I only give it 4 stars because I tweaked the recipe. Instead of all butter I used 1/4 olive oil and 1/4 cup butter. I substituted 1 1/2 tbsp worshestire sauce for the 3 tbsp soy sauce. I also added a splash (a tbsp) of white wine and topped the chicken with fresh slice mushrooms for the last 5 mins. I made sure to baste the mushrooms.

Pan-Fried Asparagus

Great recipe but the amount of olive oil and butter is WAY too much. I followed Naples34102 advice. I drizzled olive oil in a pan and stir fried the asparagus. I added a little bit of butter and added the salt, pepper, and garlic at the end after lowing the temp.

Red Beans and Rice

GREAT basic recipe! I give it four stars because I tweaked it. I generally like to cook my rice separately in a rice cooker. I drained the beans and diced tomatoes and used the liquid to cook the rice. I also added spices as suggested by other posters. I used Emeril's Bayou Blast (contains salt, paprika, garlic powder, cayenne pepper, black pepper, mustard powder, fresh lemon peel, and "other spices."). I'm sure how much I used. I seasoned to taste. I will definitely experiment with the other spice combinations that were suggested. I served this with a nice helping of corn bread. DELICIOUS!
