Creamed Chipped Beef On Toast

I finally found the perfect recipe to use up the dried beef mistakenly purchased and in my pantry for too long! I doubled the sauce and had only a 5 oz jar of beef, which was just right. Served with a packet of Marie Calendars biscuit mix, ready fast and so light and crispy, they went well with the sauce. Green beans topped it off and between me, my husband and our 3 yr old, it diappeared quickly. Might try adding corn or onions to the sauce next time for a little color and to mix it up a bit.

Rosy's Palak Paneer

A great easy recipe to introduce my family to a new dish, with new flavors (for us). I used half the tomato paste, and bought real Paneer, but I totally think firm tofu could be substituted easily in a pinch. Really had to watch the water content when the sauce was simmering, and the spinach soaked up even more, so I had to keep adding water to make it nice and saucy. Wonder if veggie broth would help to not water down the spices? I didn't realize until the end that I forgot the cilantro, but it went over great without it! Served with warm garlic naan.

Jo Jo's Favorite Banana Muffins

These came out nice and simple, just like the recipe. I only had one banana, so I added just a tiny bit of almond extract for a little more flavor. I agree less time is needed. I only baked mine for 20 minutes, and they were just right, but close to overdone. More bananas as directed would have definitly helped with the moisture. As is, they had a crisp top right out of the oven. I used all the batter for just 12 muffins, which made for nice big muffin tops.

Caramel Bars

Try the original recipe as written first! I used reviewers suggestions the first time and doubled the crust, but after trying again, I really like the original version better! More gooey and yummy. I may have mismeasured something in the doubling process, but I will now always try the original recipe, and THEN add suggestions as needed. The foil in the pan in very helpful. I also used pecans because I like them more than walnuts.

Texas Sheet Cake V

Definately a cake you want to make and give away so you don't eat the whole thing! I've always had trouble with the frosting on this type of cake, but this one turned out perfect! I didn't add the nuts, but the cake and frosting are so sweet I can see how they would add a nice balance. I liked the suggestion of sprinkling them on half at the end so people can choose.

Stuffed Acorn Squash

Very good! I added sausage and used cornbread stuffing with sauteed onions and celery. I went light on the brown sugar and we ended up adding more as we ate because it was a nice balance to the savory sausage. Will absolutely make again, even for company!

Hamburger Stew

Easy and perfect for a rainy day. It might have been a little spicy for our two year old, but we loved it. Next time I might add only half the taco seasoning packet. I also added a little corkscrew pasta at the end. Great with cornbread.

Mexican Lasagna

Super easy, pretty good! I asked my husband what he thought and he said if it's easy and fast to make, it's great! If not, it's just okay. Nothing fancy, but good eats. Added kidney beans and olives, and cheese on every layer. Served with fresh tomato, onion, lettuce and sour cream.

Waldorf Salad II

I was given some rhubarb at work and a coworker said it works good in Waldorf salad, and she was right! This was a great basic recipe to try, substituting the rhubarb for the celery. Adds a nice twist, kind of sweet and a little sour.

S'more Brownies

I didn't have a box mix on hand so I made homemade brownies that were a little more cakey. I think I would have liked the chewy, fudgy taste of a box mix better, but love the topping regardless. I used semi-sweet chips, mini-marshmallows and low-fat grahams. I think next time I will cut down on the chocolate chips, and add more marshmallows because that is my favorite part, and they look so pretty toasted in the oven!

Quick and Easy Brownies

I needed an easy brownie recipe to fill in for a layered brownie recipe that called for a box mix. This was almost as easy. I usually prefer chewy fudgy brownies, but these held up well under the topping of chocolate chips, marshmallows and graham cracker crumbs. Wouldn't bake them alone unless I altered the recipe to make them more fudgy, but love how easy they were in a pinch!

Eggplant Parmesan II

This was our first time ever EATing eggplant, let alone cooking it. This recipe was very easy and super tasty. I also sliced the eggplant pretty thin, and cut down on the cheese a bit just for personal preference. Reduced the servings to 4 and still had lots of leftovers. Served with a little whole wheat spaghetti.
