Creamed Chipped Beef On Toast
I finally found the perfect recipe to use up the dried beef mistakenly purchased and in my pantry for too long! I doubled the sauce and had only a 5 oz jar of beef, which was just right. Served with a packet of Marie Calendars biscuit mix, ready fast and so light and crispy, they went well with the sauce. Green beans topped it off and between me, my husband and our 3 yr old, it diappeared quickly. Might try adding corn or onions to the sauce next time for a little color and to mix it up a bit.

Rosy's Palak Paneer
A great easy recipe to introduce my family to a new dish, with new flavors (for us). I used half the tomato paste, and bought real Paneer, but I totally think firm tofu could be substituted easily in a pinch. Really had to watch the water content when the sauce was simmering, and the spinach soaked up even more, so I had to keep adding water to make it nice and saucy. Wonder if veggie broth would help to not water down the spices? I didn't realize until the end that I forgot the cilantro, but it went over great without it! Served with warm garlic naan.

Jo Jo's Favorite Banana Muffins
These came out nice and simple, just like the recipe. I only had one banana, so I added just a tiny bit of almond extract for a little more flavor. I agree less time is needed. I only baked mine for 20 minutes, and they were just right, but close to overdone. More bananas as directed would have definitly helped with the moisture. As is, they had a crisp top right out of the oven. I used all the batter for just 12 muffins, which made for nice big muffin tops.
