Amish White Bread

Reviewed: Feb. 9, 2004
This was my first attempt at baking bread. I was petrified at several steps, but eventually both loaves turned out gorgeous and tasty. I used a little more than half the sugar called for and that worked out fine. I wasn't prepared for the dough to be so crumbly upon the first kneading, but was reassured after the rise (which took 1.5-2 hours in my cold and drafty kitchen). I will bake again! Thanks!

Baked Chicken Nuggets

Reviewed: Jan. 29, 2003
Tasty and flavourful, these chicken bits were a big hit with my husband. I think I'll cut down on the basil next time as mentioned by previous reviewers.

Bacon Chicken and Dumplings

Reviewed: Jan. 23, 2003
It's good, but several changes needed: The dumplings need more mix to cause the batter to be the proper thickness called for in the recipe. I only used one potato and left out the corn. As a southern-bred person, add anything else besides the chicken and dumplings and we called it stew!

Chicken In Sour Cream

Reviewed: Dec. 25, 2002
My husband and I don't add much (if any) salt to our food, so the salty quotient of this dish nearly shot our heads off. If I make this again, I would cut the soup mix in half and in agreement with a previous poster, add milk to what seemed like a rather thick sauce/gravy.

Creamy Caramel Flan

Reviewed: Dec. 17, 2002
Because I'm new to this baking thing, I need very specific directions to what I'm supposed to do and use. I had no trouble creating the caramel glaze, but what I *did* have trouble with was deciphering if I was supposed to use a dish or a pan. In my vocabulary, a dish is made of glass and a pan, metal. I think my problem may have been that I used the dish called for in step 1, because the caramel did NOT set up at all.

Smoked Salmon and Egg Salad

Reviewed: Dec. 17, 2002
My husband absolutely raved! I'm not into crunchy stuff in my egg salad, so I omitted the celery and only used 1/4 of a red onion. Next time, I'll reduce the onion even more or eeven omit, because the main ingredients are quite tasty on their own. Will probably add sweet salad cubes next time, too.

Hot Spiked Cider

Reviewed: Dec. 17, 2002
This stuff is POTENT! I used Capt. Morgan's rum and mixed everything in a crock pot. I didn't bother to double the recipe because I was serving other beverages at my party, but the long faces I saw when it was announced there was no more of "that CIDER" told me I'll be doubling, nay tripling next time!

Day Before Mashed Potatoes

Reviewed: Dec. 17, 2002
I was a bit skeptical at first when I saw how thick and dry the mixture seemed the night before, but out of the oven, these mashers are perfectly light and fluffy! I sprinkled a bit of shredded cheese over them a few minutes before they were out of the oven on a lark and it only added to the dish!

World's Best Lasagna

Reviewed: Oct. 3, 2002
This was absolutely *perfect* lasagna! It didn't matter that the filling needed to simmer for as long as it did because it made my Italian husband drool for hours. Thanks for a wonderful meal!

Gourmet Chicken Pizza

Reviewed: Sep. 26, 2002
My husband and his brother thank you! They beg for this constantly! I use a pre-fab crust brushed with olive oil instead and go way overboard on the cheeses just because that the way we like it. Thanks for this winner!

Easy Salmon

Reviewed: Sep. 26, 2002
Wonderful stuff. I nixed the mushrooms after the first time and used an italian parmesean dressing mix instead, easy on the lemon. Fabulous, fast and easy.

Best Ever Meatloaf I

Reviewed: Sep. 26, 2002
Excellent, excellent, excellent! I make this at least once a week for my husband who's absolutely in love with it. I double the recipe so we can make sandwiches for the rest of the week. Nothini' like a hunk of day old meatloaf on white bread with mayo! I also use tomato sauce vs. juice and minced onion vs. fresh chopped. It is still wonderful stuff to be such a simple recipe.
