Vegan Crepes

I really liked this recipe. It worked out pretty well, after about 3 "victim" crepes. However, I had the flame on medium high heat, so I never got a chance to swirl the batter. (I actually tried swirling it, but I was only able to do it is if the pan wasn't hot enough, so it really didn't work out.) This was much better for me because it just spread out, but still had the lacy look of crepes. I'm making "crepe Sunday" a new tradition in our household.

Snickerdoodles III

My husband has a vegan gluten-free diet. I have been baking from non-vegan recipes, using substitutions for certain ingredients. I used 1/2 each of white rice and brown rice flours instead of AP. Instead of 2 eggs, I used 1/2 cup of canned pumpkin puree. My husband must have gobbled down about six of them, once they cooled down. He loved 'em! One issue that I did have was the instruction of not greasing the cookie sheets. BIG MISTAKE!! The cookies broke apart and they were crumbly. Unfortunately, I had prepared two sheets like that. I greased the other two with canola oil and it worked beautifully. That would be the one thing I would have changed. I will definitely make them again.

Dolmas (Stuffed Grape Leaves)

I made these for a potluck party and couldn't bring them. I followed the directions exactly as said, both in this recipe and how to prepare the grape leaves by putting them in boiling water for a minute. But this didn't work out at all. The grape leaves were stringy and never softened up. The filling was good, but the rest of it - This was such a disappointment because based on the reviews, I thought this was a sure fire hit.

Chewy Coconut Cookies

This recipe could have had a better outcome if I had greased the cookie sheet. A lot of the cookies were ruined because they fell apart when I was trying to get them off the sheet on account that the sheet was ungreased. If I make this recipe again, I will be definitely use oil on the sheets.

Creamy Blueberry Pie

I made this for my brother, who loves blueberry pie. He thought it was fantastic, but that it was like eating a blueberry muffin that wasn't fully cooked. He said it was great and he took half of it with him after our Christmas feast was over. In my opinion, I don't think it should be called Creamy Blueberry Pie. I would describe it as more of a cake, due to its texture. It was definitely not what I expected, but it was good and I will be making it for my brother again.

Pecan Pie V

I followed the recipe to a T and it was not moist, but very dry. The filling did not hold up well at all and I was the only one to have a piece - no one else at the Christmas feast even touched it. It was very unappetizing looking. I didn't expect it to come out so bad. I was really disappointed, especially after reading all the rave reviews. Maybe there's a reason why it's better to use corn syrup than sugar. With corn syrup, you get moisture, which is what this pie needed.

Oven Potato Wedges

I made these last night for dinner and my husband and I just loved them! We both agreed that these were the best oven fries we have ever had. And I liked that I didn't have to flip them over. One thing I did change was the cooking time. I did what the recipe said, but they weren't cooked enough. I added about 15 minutes more and they turned out nice and crispy and just delicious. The onion and the spices added a great flavor to them. Next time, I am going to also coat the pan with oil because they were sticking - but they got really crispy, so maybe not. We will definitely be making these again and again.

Italian Anisette Cookies

I really love these cookies. I used 3 tsp. of baking powder instead of the 6 tbsp., as one reviewer suggested. When I first made them, the dough was crumbly. When I made them again, I used a little more water, which helped a lot. I also used more anisette extract, which made a difference. But the topping on the cake was sprinkling nonpareils on top (after a generous amount of icing), to make them colorful and visually appetizing. My friends and family LOVED them. One of my friends said that they were even better than the ones he got in Boston's North End!
