Pepperoni Stuffed Zucchini

I think I'll need to either pre-cook the zucchini "boats" first or adjust the cook time next time because mine came out a little under cooked. But my husband really liked it. We eat a ton of zucchini and I'll definitely try this again.

Sweet and Sour Pork Patties

This was fun and different! I used other reviewer's suggestions and made meatballs instead and baked them in the oven for 25 minutes. I also used Sweet and Sour Sauce II (also as suggested) and it was perfect. Will probably make again, and next time might try ground turkey instead.

Pleasant Pork Chops

This deserves a better name! This was really good, will probably make again. We didn't need to cook the chops in the broth for an hour though- just about 45 minutes was plenty of time. Yum.

This was very good but maybe a little on the sweet side? I doubled the recipe, but next time I won't double the brown sugar. The only other change I made was to add onion. YUM!

We loved these!! I will definitely be making this again but like another reviewer mentioned, I will cook the carrots first to make them easier to mash. In any case, my husband and my 13 mo. old LOVED them.

Cottage Cheese Chicken Enchiladas

I was hesitant because my husband can't stand cottage cheese but it turned out delicious and he never noticed (and I never told!). I accidentally grabbed the large flour tortillas so the recipe made 4 HUGE enchiladas. Next time I'll grab the smaller ones. Great recipe though! Thanks!

Pat's Baked Beans

These baked beans are my new favorite! I made them for a mother's day cookout and everyone loved them! Per the advice of previous reviewers, I cut back the sugar and used more bbq sauce than ketchup. I will definitely make this again!
