About this Cook
I am a working mom of one, two if you count my husband! My husband and I commute 90 miles each way to work and we take our daughter 60 of them. So we are away from the home quite a bit. I have high blood pressure and have to be very careful of the amount of sodium I eat, so we do very little eating out. I enjoy cooking as long as I have a plan of what I am cooking. It also has to be quick and taste good!
My favorite things to cook
Casseroles, pasta, anything in the slow cooker, and soups!
My cooking tragedies
Pumpkin soup. I don't remember where I got the recipe, but it was atrocious!

Pineapple Cream Cheese Pie
I thought the flavor of this pie was wonderful! I did not try the cream cheese mixture by itself, but didn't think it was flavorless. I agree with another reviewer that the filling wasn't enough for a deep dish pie. I put half of the pineapple mixture in each crust and then when I went to add the cream cheese mixture, realized that it wasn't enough, so I put the whole batch of cream cheese mixture in one pie. Next time I make this, I will put a whole batch of both the pineapple mixture and the cream cheese mixture into one 9 inch deep dish pie. I would probably try to layer the pineapple mixture, then cream cheese then pineapple and top with cream cheese. It is definitely WAY better the second day too, so do make this the day before and allow plenty of time to chill before serving. My co-workers LOVED IT! The only reason I am giving 4 stars is because I believe the measurements are off for the fillings.

Creamy Linguine with Zucchini
I made this today for lunch and my husband and I both really liked it. I think it could be modified to be even better though, depending on your tastes. I would add onions, mushrooms, and diced tomatoes. We also made this using an alfredo sauce recipe from this website as well that was delicious. I don't typically like store bought alfredo sauce, so I don't buy it. Otherwise, I made the recipe exactly as stated. Some other things I would change is drain the zucchini before adding to the garlic and oil mixture. Just small changes that would enhance this recipe, but really it is good as is.

Chesapeake Crab Ball Appetizer
As written, this recipe isn't very good. I had to keep tasting and adding more seasoning to it. We also added fresh parsley into the mix as well as garnishing the top (just put in a dish instead of making balls) and it was good. Will make again with modifications but not as is.
