Chicken Parmigiana

This dish is my hubby's absolute favorite! I like to use thin-sliced chicken breasts and brown them (after coating in bread crumbs) in a few tablespoons of olive oil, over medium high heat, until they are nice and golden and crusty, about 2 minutes per side, before baking (another 8-10 minutes in a 400 degree oven). Delicious!

Barbecue Butter Beans

I brought these butter beans to a barbecue at my in-laws' and everyone LOVED them! "These are better than Bush's!" they said (and these people love their Bush's baked beans). The only thing I do differently is saute the onion in butter until it is soft and I bake them for just 1 hour. 1 1/2 hours is too long--the bacon will burn and the beans will dry out. Needless to say, I think these beans will be making a regular appearance at family barbecues from now on.

Sloppy Joe Sandwiches

I too am a former Manwich fan, but after tasting this recipe, I will never go back to the canned stuff again! It was delicious and even my ten month old could not get enough! The only thing I might do differently next time is brown the meat with some chopped onion and add a 1/2 tsp. or so white vinegar to balance out the sweetness. I'm making myself hungry for more just thinking about it! Delicious!

Chicken Marsala

This recipe was absolutely delicious, and I didn't change a thing! My only complaint was that there was not enough sauce, so in the future I will double the oil, butter, marsala, and sherry. I also plan on adding more mushrooms, but I am a mushroom lover. I served it with Rachel Ray's "Rice Pilaf" recipe. It was a perfect combination!

Lisa's Chocolate Chocolate Chip Cake

This cake was delicious! I brought it to a small gathering at my in-laws' house and everyone loved it! One girl even asked for a second piece and my husband has requested it for his birthday cake! I topped it with "Satiny Chocolate Glaze." I used just straight up "Chocolate" cake mix, but next time I might use a Devil's Food or Dark Chocolate cake mix. Not that it needed any improvement!

Easy Grilled Lemon Chicken

I originally found the flavor of the soy sauce to be overwhelming, so now I use 1/4 C. soy sauce and 3/4 C. lemon juice. Delicious!

Baked French Fries I

These fries are wonderful. I add pepper and LOTS of salt. I've made these a few times with fresh potatoes, but I recently tried this recipe with frozen fries to save some prep time. I used half a bag of frozen Ore-Ida "Fast Food Fries," doubled all the spices, and used 2 Tbs. olive oil. I tossed it all together on a baking sheet (sprayed with PAM) and arranged the fries in a single layer before broiling on low for about 5 minutes. Delicious!

Four Cheese Macaroni

This recipe was fabulous...WITH a few minor modifications. After reading other reviews, I omitted the eggs, doubled the shredded cheeses, and used 2 C. Half & Half. Then... Cook macaroni until al dente. Return to cooking pot and mix with 1/4 C. butter. Set aside. Melt 1/4 C. butter in a saucepan. Stir in 1/4 C. flour. Gradually stir in 2 C. Half & Half. Cook, stirring constantly over medium heat, until sauce thickens. Stir in salt and pepper. Stir in cheeses. Cook, stirring constantly until cheeses are melted. Mix with macaroni and transfer to a lightly greased casserole dish. Top with some shredded cheese and 1 Tbs. butter. Bake for 15-20 minutes, or until cheeses on top are melted. This process helps give it a much creamier texture--like Stouffer's. YUM YUM!!!!!! :) ***UPDATE*** Although I enjoyed this recipe with the changes I made, I decided (despite my doubts and the opinions of other reviewers) to try following the original recipe, with the only change being doubling the cheeses. OH MY GOODNESS, my search for the ultimate mac & cheese ended there! It was the creamiest, gooiest, cheesiest mac & cheese I have ever had! I threw out all my other mac & cheese recipes and decided this will be the one my kids will grow up on. Delicious!

Broccoli and Garlic Penne Pasta

The first time I made this recipe the sauce was thin and bland and there was very little of it. I decided to try it again doubling all ingredients (except the pasta & broccoli) and it was wonderful! I also sauteed the garlic in a little bit of olive oil first, added strips of grilled chicken breast, and topped each plateful with TONS of shredded (not grated) parmesan cheese. The final outcome was delicious! This will definitely be a regular in our house!
