Pumpkin Pancakes

This is a really good recipe but I found the batter too thick. My first batch of pancakes were not dry on top by the time the bottom was done, even though I heated the skillet throughly before pouring the batter. I added a splash more milk and it worked perfectly, maybe 2 tbsp more than the recipe called for. Delicious, fragrant and fast!

No Bake Peanut Butter Pie

I changed the recipe to make only one pie as it was just me and my boyfriend last thanksgiving. He absolutely loved it! He kept going back for more. I found it very hard to cut so I had to let the pie sit out for a few minutes and use a knife run under hot water.

Perfect Pumpkin Pie

I made this last Thanksgiving and the whole pie was gone by the next day (it was only me and my boyfriend). I didn't use separate spices though, as I had already mixed up own pumpkin pie spice a week before I used that so I don't know exactly how much of each went in. I also used a but more spice then called for because I LOVE pumpkin pie spice and wanted it to be stronger.

Mouth-Watering Stuffed Mushrooms

I made these the other night for a snack during a movie. They were pretty good, but they didn't match up to others i've had in the past. I'm still on the lookout for the perfect stuffed mushroom. I found the cheese was sort of grainy in the cream cheese mixture and the weird sensation was a big factor why we weren't huge fans - thus might have been due to the brand of parmesan we bought though.

Twice-Baked Mashed Potatoes

I've made this three or four times now for holiday dinners or when guests are coming over. It's really good! I used an old cheddar the last time I made it and found it added a nice kick. It's a tasty side dish and definitely worth making.

Brown Sugar Meatloaf

Delicious. I put the sauce on top of the meatloaf, and whipped up an extra cup to use as a drizzle/dip once it was out of the oven.

Beef Stew VI

This turned out really REALLY good, but I found it very salty. I thought it might be due to the brand of boullion I used, and it was (oxo brand). I used 2 and 3 the next times I made it, and found it was best with 3 to get enough flavour without the huge salt taste.

Pecan Pie V

I will make this again, but I will take the advice of some reviewers and tweak the baking time. It was perfect on the inside, but the top was rock hard and tasted a little burnt. :) Still delicious.

Lentil Soup

I added some Cauliflower and one small red potato, cut in to small pieces because I had to use both of them up, and I loved it. I also had no crushed tomatoes, so i cut four Roma tomatoes up, heated them in the microwave, and went after them with the potato masher. :)

Banana Banana Bread

I like this recipie, but I wish I had have taken some other's advice and cut down on both the amount of Banana and the butter. It was still slightly undercooked in the center when the outside was a dark brown because it was so dense. :)
