Mom's Best Macaroni Salad

Reviewed: Nov. 2, 2012
I followed the recipe as written, and didn't read any reviews prior to making (which is a first). The salad turned out fantastic. Definitely makes a difference if it is made the evening before serving. All the neighbors raved about it. Will definitely make again. Good job Mom!!!

Bourbon-Mango Pulled Pork

Reviewed: Jul. 6, 2011
I made this for an office pot luck and it was definitely the hit of the lunch. The biggest modification I made was substitute the chipotle powder with real chiles. I used 1/2 of a small can of chipotle chiles in adobo sauce in the crock pot (coursely chopped). I used the other half when I pureed the mangos for the sauce. I also doubled the honey and bourbon.

Hawaiian Chicken Kabobs

Reviewed: Jun. 21, 2011
These turned out GREAT!!!! Followed the recipe as written for the marinade. I added zucchini and bell peppers to the skewers along with the chicken. Made a second batch of the marinade, replacing the sherry with the rice vinegar. The second batch was used to baste the chicken while grilling. Grilled the chicken and veggies. Separately grilled the pineapple for a few minutes. Added all items in a bowl and served.

The Best Cheeseball

Reviewed: Dec. 20, 2009
This is my first cheeseball to make. Following some suggestions from other reviews, I used a cup of pepper jack and a cup of cheddar cheeses. I used 2 jalapenos (next time I will leave the seeds in to pack some heat) I used about 2 tablespoons of worcestershire sauce, 2 teaspoons garlic powder, several drops of Louisiana hot sauce and a dash of lime juice. It turned out very well. I will definitely make this again.

Tartar Sauce II

Reviewed: Sep. 12, 2009
Very good tartar sauce. I left out the egg, and added a couple more dashes of hot sauce. My friends thoroughly enjoyed it. One suggestion: make it the night before. the flavors meld much better than chilling for 30 minutes.

Crab Cakes III

Reviewed: Sep. 10, 2009
First time I ever made crab cakes. A few modifications: used 8 oz of crab meat. 12 oz of shrimp (Tangy Shrimp) and 6 oz of salmon (Chili Garlic BBQ Salmon). blended the fish in a food processor. modified the ingredients a bit since it was less than 4 pounds. Also, on the sauce, for some reason the vegetable oil killed the fragrance of the cilantro. So I added more cilantro, lime juice and an egg. Turned out GREAT.

Tangy Shrimp and Scallops

Reviewed: Aug. 16, 2009
Excellent recipe. After a couple of bites I was expecting more flavor, but after a few more, I realized the marinade did not over-power the flavor of the shrimp. Great combination of flavors. In summary, used minced garlic, added some cayenne pepper, doubled the marinade to have extra to baste. Eliminated scallops as I only had shrimp in the freezer. Also, major blow to grilling. Had no gas so I broiled in oven. 5 minutes on one side, 4 minutes after flipping and basting. I think grilling will work best. Will definitely try again. Many times. Thank you for a great recipe.

Creamy Chicken on Linguine

Reviewed: Apr. 27, 2008
Exceptional recipe. Thanks to the reviewers for your comments that allowed me to tweak the recipe to bring it to another level. I sliced the chicken lengthwise and marinated it in a garlic, herb and wine marinade for a few hours. Followed the recipe (added more garlic. can never have too much garlic) and it turned out wonderful.
