Chicken Quesadillas

Reviewed: Sep. 8, 2010
I make something similar to this recipe, but shred a supermarket rotisserie chicken to save time. To make the sauce, I use medium taco sauce and chili powder blended with the chicken and cooked veggies. I spray a baking sheet, add a tortilla, then fill with chicken/veggie mixture and cheese. Top with another tortilla, then etiher spray with cooking spray or spread with melted butter and bake. I use a pizza cutter to cut into wedges for serving

This is similar to a recipe I use all the time. I add Italian seasonings, shredded mozzarella and parmesan and no mushrooms (family preference). The I put it all in a large casserole, cover and microwave for 10 to 12 minutes for the flavors to blend.

Summer Brew

We make this as a Strip and Go Naked also, but with whiskey, beer and lemonade concentrate, in a blender with lots of ice, sort of an "adult slushie"

Comforting Cube Steaks

Reviewed: Oct. 21, 2008
This is a tasty recipe, though I will admit that I made some changes. I was afraid of the saltiness so instead of the onion soup mix, I used dried onion ans seasonings instead. I had no lemon-lime soda so I used a bottle of Mike's Hard lemonade left over from a party. It turned out wonderfully, though next time I will cook in my slow cooker, as suggested by som others.

Grilled Chicken Adobo

Reviewed: Oct. 1, 2008
Overall this is a good recipe and I would have rated it much higher but even reducing the soy sauce to 1 cup made it way too salty for my family. The other seasonings are good and other than the salty taste, the flavors meld well during simmering. I didn't grill the chicken, just thickened the sauce with a w/ cornstarch & water. When I make this again I will reduce the soy sauce even further to 1/2 cup and increase the water to 2 &1/2 cups

Sweet and Savory Ribs

Reviewed: Sep. 29, 2008
This recipe is great. I have made it several times, with or without the mustard (sometimes I forget it!) Would agree with others that pure maple syrup is better than pancake syrup. I usually put onions in the bottom, ribs salt and fresh ground pepper and some garlic, then cover with the sauce mixture. Cook and serve with mashed potaotes! Yum...

Italian Chicken Marinade

Reviewed: Aug. 3, 2008
A very easy recipe -- I omit the salt and garlic powder and use the zesty italian dressing. You don't need a whole bottle, just enough to coat the chicken in a large zipper top bag! Delicious
