Mushroom Orzo

I left out the onions because they are unpopular at my house. To replace some flavor I threw fresh sage in with the melting butter before I started cooking the mushrooms. It was perfect, easy to put together, and I will definitely make it again.

Cajun Chicken Pasta

I assumed that "Cajun Seasoning" meant the jar in the spice aisle labeled as such. As a result I ended up with a salty mess - that packaged seasoning is mostly salt. Next time I make this, I will just add in the spices that make up the Cajun seasoning and leave out most of the salt. Cayenne pepper, onion powder, oregano, and thyme would be ample seasoning and keep it "cajun".

Italian Sausage Tortellini Soup

This was very good and well liked in my family. I made it according to the directions and when I tasted it at the end it felt like it needed just a little kick. I tossed in a healthy pinch of crushed red pepper flakes and some fresh ground black pepper and it was perfect. Definitely will be making it again.

Big Ben's Beef Machaca

My family loved this! I used half a beer instead of the beef broth (I forgot to buy broth) and it came out perfectly - I will make again and stick with the beer.

Famous Pork Chops

Simple to put together and delicious. My kids ate more of these pork chops than I've ever seen them eat. I used thick "farmer's cut" pork chops from the butcher counter and they came out absolutely perfect.
