Family Favorite Hearty Chicken Stew

This is my recipe, and I forgot to put in the directions to add the can of cream of mushroom soup when you add in the chicken and spices. I've made this a few times now and we all love it!

Honey Balsamic Vinaigrette

Made this when I had the girls over for lunch and it was awesome. I put it on a salad with romaine, cucumber, tomato, green onions, red pepper, pecans and goat cheese. Amazing!!!

Good cookie, very heavy and filling. They were not the easiest to roll out, I think using quick oats would have made rolling easier than the large flake I used. They took me a long time to put together and I don't think I would make them again.

Chocolate Chip Oatmeal Muffins

This recipe is exactly what I've been looking for, a moist, chewy and nutritious muffin. I wrote the recipe out and put it on my fridge to always have it handy. I use organic whole wheat flour, but other than that follow the recipe exactly. I do add different things, like a few mashed bananas when I have them on hand, or try chocolate covered raisins for a yummy treat.

Playgroup Granola Bars

I have made these several times now and always add different things to keep them interesting. Today I added 1/2 cup of skim milk powder to boost the protein, and chopped apples and butterscotch chips. I run a home daycare and all my children loved them!

Creamy Chocolate Cupcakes

These were really good, but I did find the cake to be a little dry. I used milk instead of water, and peppermint extract instead of vanilla as my kids love chocolate mint. I think next time I'll add some apple sauce to the batter to moisten it up a bit. I heaped the cream cheese on top and swirled it around a bit which made a beautiful presentation without the need for icing. The result was a cheesecake topping and centre.

Banana Chocolate Chip Cookies

Amazing cookie if you use Almond extract instead of vanilla, and use 1/2 chocolate chips and 1/2 butterscotch chips. The almond extract really brings out the flavor of the banana. I followed other reviews of using 1/2 brown sugar and only 1 tsp baking powder. Results are a soft cakey cookie with a unique flavor.

Sunshine Chicken

I served this to 5 children for lunch, ranging in ages from 13 months to 3 years old and they all gobbled it up! I used boneless skinless thighs, turned the chicken over after 15 minutes and turned the heat up to 400 and baked for another 15 minutes to carmelize the sauce a bit better. I then chopped up the chicken, added some corn and pan juices and served over buttered brown rice. This has become our new favorite!
