Swiss Chicken Casserole I
I love this recipe. I brown the chicken first to add more flavor, and I use 1 c Sour Cream instead of the milk. I didn't put butter on the top, but rather poked the dry stuffing down into the soup/sour cream mixture. Next time I'm adding sautéed mushrooms. Yum!

Cuban Picadillo
My kids and I really liked this recipe. I used stir fry beef instead of hamburger, chopping it up after it was browned like they do at Baja Fresh and other taco places. I served it with coconut rice - very good combination. To make coconut rice, cook 1/4 onion or 1/2 shallot in 1T butter til tender, add 1 cup jasmine rice, 3/4 cup coconut milk and 1 c water, bring to a boil, cover and simmer for 18 minutes. Stir in a dash of nutmeg if you like and serve either beside or under the picadillo.

Beet Soup
I made this in my VitaMix in about 7 minutes. I micro'd the stock and then blended on high with the raw beets. I sauteed the rest and added to the mixture. It was yummy!! Even my 7 year old vegetable hating daughter had several spoonfulls.
