Banana Oat Muffins

Reviewed: Apr. 18, 2009
I needed to use up 2 bananas, so I thought I would try this. Good texture with the oats. I made mini muffins and baked for 12 minutes at 350 degrees. I also added mini chocolate chips and walnuts to half the batter. Pretty good.

Nickie's Apple-Pecan Cheesecake

Reviewed: Apr. 11, 2009
This tasted great, but I had trouble getting it out of the pan and keeping it presentable. I like recipes that taste great and look great as well. This did not look great. Maybe with a little more practice, it will look better.

Golden Rum Cake

Reviewed: Apr. 11, 2009
Awesome! I used Appleton Rum from my honeymoon in Jamaica. It definitely gave the cake a kick. My coworkers wondered if it was legal to eat at work!

This recipe is great! I don't have a bread machine, but I used the help of other reviews, and my rolls turned out perfect. My husband took them to work and they were a hit! Yum!

Beth's Spicy Oatmeal Raisin Cookies

Reviewed: Nov. 21, 2008
These are great cookies. They stay soft, and have just the right amount of spice. I divided the dough, and made half of the cookies oatmeal raisin and half oatmeal chocolate chip. Thanks for a great recipe!

Best coffee cake I have found yet. More moist than the others. Makes a nice presentation. It was a hit at my family camp out breakfast.

Downeast Maine Pumpkin Bread

Reviewed: Oct. 10, 2008
Wow...this is really great pumpkin bread! It has a great spicy flavor, and the house smelled wonderful while it was baking. I used 1/2 cup applesauce (unsweetened) and 1/2 cup canola oil. I made one loaf, six regular size muffins, and 12 mini muffins. I added chocolate chips to the muffins for my nephews. Great recipe!

Apple Crisp II

Reviewed: Sep. 17, 2008
This was my first homemade apple crisp, and I was very pleased. I used 1/4 cup apple cider instead of 1/2 cup water. Next time I may try adding the full 1/2 cup apple cider just to see what it does to the consistancy. I also added about 1/4 tsp nutmeg to the filling. I sprinkled the sugar mixture over the apples and it turned out fine. Next time I will try tossing the apples with the mixture to see if it makes a difference. Smelled wonderful baking!

Overnight Coffee Cake

Reviewed: Aug. 29, 2008
This is the first coffee cake I have ever made. It turned out great! I brought it to work this morning, and it has gotten rave reviews. I did not refrigerate it over night. I don't know if that makes a difference...it was still excellent. I followed the recipe exactly, topping and all(except the overnight refrigeration part).

This bread is awesome! I pour a tbsp of melted butter on top of the dough before I bake it. It is great to eat alone or make sandwiches with. My husband and I love it!

Amish Friendship Chocolate Bread

Reviewed: Apr. 24, 2008
This is really good. I only gave it 4 stars because I modified it. First,I mixed 1/3 cup cocoa powder and 1 tsp cinnamon with the dry ingredients. Next, I used 1/2 cup oil and 1/2 cup applesauce instead of a whole cup of oil. Last, I folded in a 12 ounce bag of semi sweet chocolate chips. I made one loaf and 12 muffins. The muffins baked for 20 mins and the loaf baked for 60 mins. They both came out perfect! I can't wait to try other variations on the Amish Friendship starter!

Brooke's Best Bombshell Brownies

Reviewed: Apr. 7, 2008
These brownies are excellent! Way better than box mixes. They are very easy to make. I used a glass 13x9 baking dish, and I lowered the temperature to 325 degrees and baked the brownies for about an hour. They came out perfect, and they cut very nicely. From one Brook(e) to another...Thank you!
