Southern Style Holiday Greens

Reviewed: Jan. 4, 2010
My family loved this recipe and it was so easy! I used 1 bag of pre-washed turnip greens and left everything else the same. This cooking time was pefect...tender and flavorful!

Grilled Orange Vinaigrette Chicken Salad

Reviewed: Aug. 20, 2009
I liked it. I seasoned the chicken w/ S & P and garlic powder before cooking, and only added a tsp. or so to the dressing. I used fresh spinach instead of lettuce. I will make this again.

Salmon with Dijon Cream Sauce

Reviewed: Aug. 5, 2008
Follow the sauce recipe exactly "except" reduce the flour to 1T, add some garlic, tarragon and seasoned salt to the sauce. That's what was missing for us. Did you guys get into the Chardonnay? Pinot Grigio works better!

This went well as a side dish to burgers. Added chopped purple onion and sliced back olives. Very tropical!

Grilled Brown Sugar Pork Chops

Reviewed: Jul. 7, 2008
Made this for company over the July 4th weekend. Really really good! I followed the other advice & marinated the chops for several hours w/ 1/2 apple juice & red wine vinegar because I didn't have the apple cider. Definately serve it w/ Cinnamon Rice w/ Apples! I used a Fuji apple. Next time I will make this w/ country style pork ribs! Yummy!

This is a great recipe because it's so flavorful. I use the basic receipe then I like to add 10 ozs. Perdue cubed, cooked chicken & a handful of Ocean Spray Craisins or Sun Maid cranberries & raisins w/ a sprinkling of dill weed. Yummy!

Tara's Sweet and Chunky Chicken Salad

Reviewed: May 3, 2008
Thanks, Tara! This is a clean, refreshing chicken salad. I used left over chicken thighs (chopped bite size), a little more mayo (eyeball it to your liking), 1/2 t. dried dill weed, 1/3 c. chopped vidalia onion, 1/3 c. chopped pecans, 1/4 c. chopped celery, and 1/3 c. craisins. I agree this could be the "kitchen sink" or "garbage" chicken salad, but Tara's basics make it incredible! This would go over well at BBQ's and gal pal luncheons! Next time I will try canned chicken (Buy one, get one free) and dill relish. Thanks again.

Wonderful Short Ribs

Reviewed: Apr. 17, 2008
I didn't have 28 ozs. of tomato sauce, only a 15 oz. can so I added 13 ozs. beef broth to make up the diff. I used 2 lbs. boneless beef short ribs, browned them first in a little olive oil, added 1 tsp. minced garlic and used seasoned salt in place of table salt. Simmered for about 2 hrs. Was very tender and very flavorful! Husband loved this! (He doesn't care about fat!) Next day, skimmed off the solidified fat and was much much better. This is a definately a keeper, and next time will either skim more or refrigerate before serving. I will also try the crock pot version.
