About this Cook
I have used this site for 2 years now and felt guilty reading reviews and not leaving any of my own. I am a cook by force and necessity, not nature. I have been married for 12 years and we were blessed with 2 daughters. I am a utilities contractor and my husband is a farmer. I don't have much free time, but you can't have a family and not cook! I am finally enjoying it a bit, probably because of so much information available. I can't stand spending a fortune in time and money, just to have a recipe flop. I am impatient, but I enjoy creating so much, I can't resist trying, especially with advice and help. I do pledge to be honest in reviews and only review when I have followed the recipe. You can't complain if you only had one ingredient out of the five on the list! I also understand there are many levels and catagories of cooking expertise. I can pipe decorate a cake expertly but my bread baking is dreadful. So maybe we can help each other...
My favorite things to cook
Desserts (I'm a sugar freak), Christmas dishes, Simple quick meals, Pies, Enchiladas. I use only real butter and cane sugar and my rear end pays the price.
My favorite family cooking traditions
Every Christmas I make decorated sugar cookies with the girls. We then wrap them up and cookie monster (leave them on doorsteps, ring the bell and run) in our neighborhood. I used to do this with my family growing up. The quality of cookie is getting better by the year. It also helps that the three-year-old isn't trying to put odd ingredients into the bowl now that she's older!
My cooking triumphs
I have decorated wedding cakes. That is daunting at times. I also consider it a success when I pull off a large holiday dinner for my in-law family. (No woman will ever cook as good as my mother-in-law, according to my husband, Ha.)((She really is a wonderful cook.))
My cooking tragedies
Too many to mention. Who wants to open their underwear drawer like that?

Amish White Bread
I've been making this bread weekly for about 4 months. It is great, but I've incorporated a few changes for our tastes. The bread is quite sweet, so I took the sugar down to 1/4 c. I also add 1 small egg and use 1/4 c. oil and 1/4 c. melted butter. It gives the bread a boost of flavor. This is the only bread my family eats right now (sandwiches, toast, etc.) I make 3 loaves on Sat. I butter the loaves on the outside crust right out of the oven, let them cool, slice, put two in ziplock gallon freezer bags (just re-use them over and over), push out all the air and take them out every 2 days. It works for us. Be careful about putting too much flour in. And I use my Kitchen aid mixer. Fast and easy!

Bronco Burger
Followed this recipe exactly. I'm from central AZ, so I thought I knew hot. However. These burgers are HOT. My husband couldn't finish his. I am going to make these again, changing the jalapeneo amount to 1/3. Either I got ahold of some amazingly potent peppers, or we are total wimps. I know there's flavor in these burgers, we just had trouble finding it because we were too busy sucking down ice water.

Orange Cake
Exceptional cake. However. I was nervous about the icing being too thin and boiled it too long. Yes, it does get TOO thick if you boil it longer than 5 minutes. I dribbled it over the cake and it looked great, but the parts that didn't get icing dried out quickly. Next time I will watch it and find a happy medium. I can now see the value in covering the entire cake with the icing to lock in moisture. Other than that, the cake had a very good orange flavor. I used not-from concentrate juice and a lemon cake mix because that's what I had on hand. The family enjoyed it and I will probably make it again with revised icing.
