Sweet Basil and Oregano Bruschetta Chicken

This was the first McCormick Gourmet spice mix I tried...and it was love a first bite! After trying this delicious dish, I couldn't wait to try the others! The spices are blended perfectly! Not too over powering! And my house smelled sooo good while this was cooking! I always double these McCormick recipes whenever I make them because I always cook a full pound of pasta for my family.

Creamy Parmesan and Sun-Dried Tomato Chicken Penne

This is one of my favorite McCormick Gourmet spice mixes! I love creamy pasta dishes...especially with chicken! I used light cream instead of heavy cream and it was still delicious! These spice mixes really make the dish taste gourmet!

Pepperoncini Beef

I make this often...we call it 'Amazing Beef Sandwiches'...it's that good! I use a rump roast and sliced jarred pepperoncini (Mild). I serve it on kaiser rolls! The beef has so much flavor and just melts in your mouth! I make beef barley soup with the leftovers! This is a must try recipe!

Roasted Fan-Shaped Potatoes

This is a fun way to serve a baked potato! There's alot of prep involved because of all the slicing! But I like it because it's unique! I didn't use the breadcrumbs and I used alot more salt! I removed 1 slice of potato from each potato to give the potato more room to fan out! And I only needed to bake it fot 1 hour. Placing a wooden spoon on each side of the potato during slicing is a great idea, as mentioned by other members! It really helps to make the slices without cutting through the bottom on the potato! I served mine with fresh chopped chives and some sour cream on the side!

Apple Cake III

This was such a quick and easy cake! I made it as written except for the topping! instead of the crumb topping, I made a caramel drizzle by melting some caramel candies in the micro with a little milk. Worked great!

Cajun Spice Mix

I just made this to use in a Jambalaya recipe and it worked great! I made it as written except I didn't add the red pepper flakes...the cayenne was enough spice for me! This was perfect...the Jambalaya had just the right amount of heat with this spice mix! Not too spicy!

One Bowl Chocolate Cake III

This was perfect!!! I did as others suggested and increased the cocoa powder to 1 cup. I baked this in a 9x13 baking pan for 40 minutes. This cake is delicious in every way...moist, rich, dense, but not too much of each! The perfect balance of all! I topped mine with a peanut butter chocolate ganache...heavenly!!!

Fluffy Pancakes

This was a very good recipe! The pancakes came out very light and fluffy! The only thing I would do differently is to add some vanilla extract next time! I also used this recipe to make bacon pancakes...it worked perfectly!

Easy Mint Chocolate Chip Ice Cream

This is my first time making ice cream and it was so easy and delicious!!! I used 1% milk and light cream but everything else was as written! This tasted just like the ice cream I get from an ice cream shop! I can't wait to try it again and experiment with different flavors! This is such an easy recipe! A must try!

I made these exactly as written and they were VERY tasty! Not too salty and with lots of flavor from the ranch salad dressing mix and the jalapenos and green onions! A nice little snack or appetizer!

Smooth Sweet Tea

I never had Sweet Tea before because restaurants never have it in decaf! That's the way I made this one! Other than that I followed the recipe exactly...well I also added a squeeze of fresh lemon...but other than those two things, I made it as written! This was very good! It tasted like a really good iced tea! I love the baking soda trick because it seems to make it taste 'Smooth', just like the title!

Italian Chicken Sausage Stuffed Portabellas

I really loved this recipe! I love creamy foods and this one was creamy, flavorful and hearty! I used fat free plain cream cheese and added fresh minced onions and chives to it. The only other change I made was to saute the sausage with fresh garlic and I used shredded provolone instead of parmesan cheese!

Roasted Garlic Chicken Sausage Caesar Salad

This was a very tasty salad! I never had a salad with sausage in it before! The only change I made to this recipe was to use mixed greens instead of romaine lettuce. and I used plum tomatoes instead of cherry! And I topped my salad with shredded provolone instead of parmesan cheese!

Sweet Italian Chicken Sausage and Tortellini Soup

This was VERY good! I couldn't find the 16 oz. package of sausage. The store only sold 12 oz. packs. The only change I made was to saute the sausage in the garlic because I heard that these sausage had a strong fennel flavor...I'm not a fan of fennel! The fennel wasn't too strong for me at all! I also added 1 tsp. of salt to the soup and garnished it with shredded provolone cheese for some extra flavor...YUM!!! We loved this recipe!

Famous Chicken Francaise

This was pretty good but it needed more flavor! I added about 1 tsp. of garlic powder and 1/2 tsp. paprika + 1 tsp. of kosher salt(it truly needs salt) to the flour mixture. I cut my chicken breasts thin so they would cook evenly and quickly. The sauce is very liquidy, so I'll probably thicken it next time! But other than that it was very good!

Corned Beef and Cabbage I

This was very good! The only change I made was to add 3 large cloves of chopped garlic. I also made a sauce for the brisket as mentioned by a member named Tracey. This is what she said... "I take the corned beef out and while the cabbage carrots and pot's are cooking in the liquid, I put the brisket in the oven for 30 minutes with this sauce that I combine on the stove until smooth. 1/3 cup of brown sugar,2 tblsp of butter tlbs. of prepared mustard, 1/3 cup of ketchup, and 3 tblsp of apple cider vinegar. I combine these ingredients till smooth, then pour over the brisket while the veggies are cooking. 30 to 40 mins. at 350 will do it. Hope you like it, all of my friends who hate corned beef will only eat mine!"... Tracey's sauce recipe was PERFECT!!! I'll make my corned beef like this from now on!
