Simple Baked Apples

Reviewed: Oct. 7, 2008
This was very good. It is exactly what the title says. I like it because it is a low fat, healthy recipe. I served it plain but I agree that it would be perfect ontop of french toast, pancakes or even ice cream. The changes I made were to use fat free half'n half instead of milk. I used raspberries instead of raisins and I used a combo of white sugar and brown sugar. Very nice recipe for apples!

Five Minute Ice Cream

Reviewed: Oct. 5, 2008
This was very good. I made it with fat free half'n half. I only used 1/2 the sugar and it was sweet enough. I used fresh picked red raspberries. I agree with the other reviewers who said it was more like a sorbet than an ice cream. Still very good. I think I'll use more half'n half next time to make it more creamy. I will definitely make this again so I can try other flavors. UPDATE: I made this again and used almost 1 cup of fat free half'n half. This made it a little creamier. I also used frozen canned peaches and 1/2 the sugar. It was perfect, but I still had to freeze it to get it to the consistency of ice cream. Now I give it 5 stars!

Michael's Foccacia Bread

Reviewed: Sep. 24, 2008
This would of been great if it wasn't ruined by too much salt in the topping! I did as the recipe states and added 1 tablespoon of salt sprinkled ontop, along with olive oil and parmesan cheese. This totally ruined the bread because it was way too salty! Other than that, it is a good recipe. Very easy. I omitted the onion and used garlic powder. I baked it on parchment paper instead of an oiled sheet, much easier clean up that way. I will try this again, but will use 1 teaspoon of salt ontop next time. UPDATE-- I made this again and used about 1 tsp of salt in the topping instead of 1 Tbls. Much better! I will be making this quite often!

Chicken and Stuffing Casserole

Reviewed: Aug. 28, 2008
This was okay. I sauted chopped boneless chicken cutlets in 1 tbls. olive oil with 1 small chopped onion, 2 cloves minced garlic and black pepper. This recipe calls for 8 oz. of dry bread stuffing. This does not mean 1 cup. It means 8 oz. net weight, which is a little more than 1/2 of a 15 oz. bag. I didn't have any problems with it being soupy, as others did. This is a good way to use leftover chicken.

Zucchini Souffle

Reviewed: Aug. 5, 2008
Amazingly good! Reading the other reviews, blandness seemed to be a problem, so instead of just adding the onion and zucchini raw ,I sauteed it with garlic. I also added 8 oz. of shredded sharp cheddar cheese to the egg mixture. This tasted perfect. Not bland at all! I will definitely be making this quite often.

Marshmallow Treats

Reviewed: Aug. 4, 2008
These are much better than store bought! This is only my second time making rice crispy treats and I followed the advice of a member named Katelyn. Adding the 2 1/2 teaspoons of milk when the marshmellows are almost melted, really does make them creamy. I think I will do that from now on!

Easy Pesto

Reviewed: Aug. 4, 2008
This was very good, but I suggest to use 2 cloves of garlic instead of 3. I'm a garlic lover, but even this was too garlicky for me. I also added parmesan cheese and a small tomato for more flavor. Overall, this is a good pesto.

Pizza On The Grill I

Reviewed: Jul. 26, 2008
Amazingly Good!I made the dough exactly as written. Except I put in fresh basil and parmesan cheese instead of basil and garlic. This made a big difference in the flavor of the crust! So Good! For my toppings I used sweet onions, portabella mushrooms, green peppers, tomatoes and of course shredded mozzerella. I grilled all the veggies ahead of time. Watch the video before making this recipe because it shows you how to be prepared to work fast. Also make sure you grill it on low heat, as others suggested or else the dough will burn. What I loved about this pizza is the smokey flavor of the crust combined with the grilled flavor of the toppings! I can't wait to try this again, so I can try different toppings and cheeses. All the other reviewers are correct...once you have grilled pizza, you will never want oven baked again!

This is extremely Good! I made it as written except I added salt and pepper.I served it with white rice and yellow rice.I liked the yellow rice better. This dish has a very South American flavor to it.My 17 year old also loved it. She said it tasted like pepper steak. This recipe makes 8 generous servings if you use 2 cups of rice.

Balsamic Bruschetta

Reviewed: Jun. 26, 2008
I made this exactly as written except I tripled it(needed to serve 22 people)and it was PERFECT! I served this on Panetini Toast(from Costco). I suggest squeezing most of the liquid out of each tomato before chopping. You don't want to have too much liquid diluting the ingredients and making the bread soggy.
