Unstuffed Cabbage Roll

I saw this recipe on Facebook and now I see it here. I tried it today and added 3/4 cups brown rice and 1 1/2 cups more water. I used spicy diced tomatoes. I cooked it on top of the stove for about 1 1/2 hours on a simmer. It turned out so delicious. I serve it with sour cream on the side. I love cabbage rolls and this is a reasonable facsimile. There will be leftovers for lunches. Yum!

Kale and Quinoa Salad

This salad is amazing! I followed the recipe to the letter, except I cooked the quinoa in chicken bouillon. I removed the rib from the kale and cut the kale into thin ribbons. I mixed the dressing exactly, then tossed the kale, dressing and quinoa together while the quinoa was still hot, in order to wilt the kale. Amazing! After it cooled I added dried cranberries and salted sunflower seeds, and feta cheese. This is so good! My daughter, who wanted me to set aside some cooked quinoa for her to make a different dish, took one taste and asked me to add the extra quinoa to more kale (essentially making another salad exactly the same) so we would have it for a few days! Sooo good, and good for you too!

Chocolate-Hazelnut Spread Cookies

I was looking for a recipe to use up the jar of Nutella in my cupboard that no one was eating. I chose this recipe because it had few ingredients (all of which I had) and the most reviews! These cookies are so,so,so good! I added 2 tsps of cinnamon as per another reviewer. Now I might have to go buy another jar of Nutella and make these again!

Kansas Tomato Sandwich

I love, love, love a toasted tomato sandwich on rye toast. Try it with real butter instead of the mayo or Miracle Whip, it is REALLY good, yummy rich taste, that lets the garden fresh taste of the tomatoes shine through. And I love it when people submit recipes that are so basic and easy that most of us don't think to submit them. But for newby/young cooks this might just be the recipe that tweaks their interest and gets them started on a lifetime of checking "allrecipes" for wonderful recipes to try! Thank you so much for submitting, it's the simple things in life that are the best!
