Rigatoni With Eggplant, Peppers, and Tomatoes

Flavor simply lacked. I ALMOST went with one medium eggplant, but decided that it just didn't look like it would be enough. so i added a second small-medium one, which i believe game me a good proportion with the full pound of pasta. given some of the other reviews, i think that the "seasoning" ingredients needs to be increased. i also used two cans of diced tomatoes instead of fresh, simply becasue it was on hand. it was a solid meal, and i could see the potential for greatness. i also topped it with some fresh Parmesan which was a big help. i also feel that it will most likely make a great cold leftover. DEFINITE for giving a second try. :)

Hot German Potato Salad III

This was my first try at a German Potato Salad. i was always a egg potato salad maker. To me it came out fair, but the MRS said it was too sweet. i did manipulate the recipe by adding 2 TBS of flour to thicken the sauce. The 5YO also ate a fair portion and gave it 4 1/2 stars. I think i will give it another try and cut down the sugar. also the 30 min cooking time for the potatoes was a bit long. i would think 20 min would work as my potatoes came out on the mushy side and hard to slice. I WILL be making this again.

Cheesy Polenta

this recipe was my first attempt at polenta. In order to prevent the typical "bland" taste, I added 3 cloves of finely minced fresh garlic just before adding in the cornmeal. I also increased the butter by 1 Tbs. Came out very very well. Fellow dinner guests, more familiar with Polenta found it to be very good. Thank you.

Italian Sausage Fried Rice

Just made this dinner tonight. made a few modifications as it was an "on hand" meal. Used white rice, and added 1/2 red and 1/2 green peppers, and 1 can large peas drained. Also added a couple (4) splashes Tobasco to add some zip. worked out well. just need to be careful not to over do the tobasco. next time will use the frozen peas as they did come out a bit soft.
