Cheesy Flounder Florentine

absolutely loved it. easy to make. used flounder, fresh organic spinach,provolone, parmesan, Italian seasoning, old bay, garlic powder, leftover angel hair pasta: EXCELLENT!!!!!!!!!!!!! Can use with lots of diff fish, seasonings, pasta or cheeses!!!!!!!!!! go for it

absolutely fantastic! as written but used butter and all organic ingredients. cannot wait to try again & again! no joke. cannot wait to try some variation. just bake till done-temp it.

Austrian Pancake

A keeper! used 1T sugar (can use 2T in future), 4 little farm eggs, 1C fat free milk & 1C heavy cream, abt ½ tsp vanilla (will up to 1+ tsp), 1T butter in cast iron pan (will use 2T in future to keep from sticking). Used blender stick to really smooth it out. Cooked for 30 min (ate half which was great also), but went back in for 10 more min & then let set for 5-10 min before serving. Overall, raised perfectly, bubbled a little & then settled down. Excellent. No eggy taste, just pancake with "custardy" body. Will be trying leftovers soon.

Old Fashioned Pineapple Upside-Down Cake

5* for posting a great base. Added 1 T sour cream, large farm-fresh eggs, organic everything possible, 12" cast-iron, fresh pineapple, cranberries, baked for abt 40 min. All else as written. Perfection.

Raspberry Cream Cheese Coffee Cake

another easy, excellent recipe. danish-like, which is what i was going for. used 9x13 glass baking dish, leftover jams (various flavors abt 1/2 C, 8 oz cream cheese w/other ingredients. for future i would add more than 1/2 cup jam, possibly fresh fruit as well and i would sprinkle top w/sugar so it caramelizes.

Haddock Marinara

i used all organic ingredients: a 16 oz jar of organic tomato basil sauce, fresh basil from garden layered w/garlic & shallots and l.5 lbs fresh haddock from costcos. then baked as in directions, added the mozz and served w/organic whole wheat angel hair pasta. we were so pleasantly surprised that i have to add this comment. it was easy too. the only changes i'll make in future are to thicken up sauce a little more since this one, although very good, was a little watery. great new way for fish filets & you can add whatever you want to change it up: different sauces & cheeses, etc. we're eating the leftovers next day, that's how good this was.

Strawberry Cinnamon Oatmeal Cookies

Used 1/3 c plain yogurt, 1/2 c fresh strawb, 1/4 c EVOO, used less sugar & subbed honey, more cinnamon & vanilla & steel-cut oats. Came out very very good. Also, all ingredients were organic and/or as fresh & wholesome as possible. Will make again.

Pineapple Crisp

I have made this countless times this spring/summer. I've used only fresh cut-up pineapple, peaches, blueberries, mango, kiwi and a mix of fruits together. I have only received rave reviews and requests to bring it along. I thought the egg in the crisp was strange too, but I went with it and it's ALWAYS a hit. I sub brown sugar for brown granulated (organic) sugar, use less than called for and sometimes add honey or agave sugar (syrup). Lots of cinnamon too. My mother-in-law said I should rate it since it's fantastic.

Apple Sweet Potato Bake

Very tasty, easy recipe, especially if you want to incorporate more sweet potatoes in your diet. I used regular apples, less sugar and added cinnamon. It's a basic recipe that can be changed or added to as needed.
