Black Bean Hummus

I made this with lime instead of lemon and smoked paprika, and it was good, but I wanted it a little more kicked up, so I a dollop of mustard, 1 tbsp cilantro, a dash of jalapeño hot sauce, and a tablespoon of olive oil. Perfect consistency for my bf (who prefers his hummus thin).

Ginger Lemonade

Absolutely delicious! I wanted this just to drink, as we eat and cook a ton of Asian-style food, but I'm probably going to save this for mixed drinks now :) I didn't have whole ginger so I used a heaping teaspoon (I halved the recipe) of crushed ginger, which dissolved nicely. Will make again and again, as we have a neverending supply of fresh lemons here in sunny SoCal!

Birthday Bones

I have made these many times since my initial baking, and have since then made cat poop shaped cookies and simple round cookies in addition to my cute cutout shapes, all of which I coated in sugar-free carob, a dog safe alternative to chocolate. The cat poop was so realistic, the pictures got banned from Myspace - but so delicious, say the dogs! I used a candy mold for the round cookies, to make skulls and spiderwebs on them. I posted a picture in the photos for this recipe :)

Delicious Gluten-Free Pancakes

The best pancakes we've ever had. Period. My bf and I went gluten-free but couldn't afford all the ingredients to make these at first, and after a sad attempt at using a gluten-free mix, I made these and was amazed at how good they are! The only thing I did differently is used 2c vanilla rice milk in place of the water and milk powder. My new favorite recipe!!!

Garbanzo Bean Chocolate Cake (Gluten Free!)

I have a friend who refuses to eat anything healthy or non-processed, especially vegetables, beans, fruits etc. I made this cake and took her some, and she absolutely loved it! I told her it was made with beans (which she hates) and she told me she didn't care, to bring her more! Definitely a 5-star recipe! I didn't change a thing!

Quinoa and Black Beans

Fantastic! I made this in a smaller size, for four. Based on other reviews, I added in 1 chopped tomato, 2 tbsp green chiles and 1/2tsp smoked paprika. I didn't have cilantro so I substituted oregano. The one thing I'd mention, which might be because I made a smaller serving, is the quinoa is sticky when wet so it's hard to mix in the seasonings after - next time I'll add them to the broth beforehand. This dish is amazing!!!

Best Lemonade Ever

For those of you like me who don't use white sugar, I used 3/4 cup raw sugar and 1/2 cup agave syrup (which is much more sweet than sugar) to the recipe, which made it plenty sweet - so sweet I had to add in about one extra cup of lemon juice! Unfortunately the brown sweeteners made it mustard-colored lemonade! Very good though!

Alfredo Sauce

I didn't have any parsley, but this sauce turned out amazing anyway! The only things I did different were add freshly ground pepper (I love pepper in my alfredo sauce) and extra garlic. Easy and delicious!

Penne with Spicy Vodka Tomato Cream Sauce

I don't eat meat, so I skipped the sausage, and I also made the sauce without the pasta, to pour instead over portobello and asiago cheese ravioli. It was incredible! I used the leftovers the next night on top of a spicy cheese gnocchi - so good, we had it two nights in a row! This sauce is really versatile and I love the spicy kick!

Banana Crumb Muffins

Fantastic! I made them just as the recipe said, with the exception of adding extra cinnamon, nutmeg and cloves to the topping (we love spices, so I always add extra), and mixing dark and light brown sugar. I think they would have been just as good without! These definitely have potential for variation as well - adding nuts, chocolate chips, even as a dessert with some fresh whipped cream on top!

Downeast Maine Pumpkin Bread

This recipe was so amazing, I had neighbors smelling it while in their own homes and coming over to taste the bread and steal the recipe! I was so impressed, I had to register on AllRecipes just to add to the reviews! I'm the worst cook EVER, so if it worked for me, it will work for anyone. I DID double the spices, add allspice and used 1/2 a cup of rice milk instead of half the oil, and added chocolate chips, but the bulk of the recipe stayed the same! Everything turned out perfect! I dusted my bread and muffins with raw sugar and cinnamon - we probably won't be saving ANY to share with family when we visit next week!
