So this is probably the dumbest thing I have ever done, but it turned out awesome! I had a moment of total dizziness and FORGOT that I was cooking a PORK roast instead of a beef roast. I did everything the recipe said and tossed that bugger in there with salt, pepper, garlic powder, a little oregano and some chili powder and cooked it at 500 for 22 minutes before shutting it off. It sat in the oven for an hour and 15 minutes and it ended up coming out AMAZING! It was the most tender pork roast I've ever made. Who knew you could cook pork at a high temp and have it come out so amazingly moist and tender? I can't wait to try this recipe with a beef roast!
