Filet Mignon with Rich Balsamic Glaze

This is simple and comes out great! I've made this a few times and never once had a complaint. I followed the recipe as is and wouldn't change anything. But be sure to start with the meat at room temp.

Pesto Pasta with Chicken

I've made something very similar but used shrimp, scallion and red pepper. I also use Knorr Pesto Sauce mix. Very easy and never a complaint.

Braised Balsamic Chicken

I made this and determined it's definitely a keeper. A very simple recipe offering a wonderful flavor without the calories. I cooked the onion until opaque then removed from pan. I had 5 huge chicken breast halves, so I cut them into 3" sections, barely fitting them all in the pan. After browned on both sides, I then added the onion and the remaining ingredients and simmered. Used a high quality balsamic vinegar and fresh rosemary (what I had). The final product was excellent.

Prairie Meat Loaf

I did not care for this recipe, nor did my family. I thought there was too much oatmeal and really didn't have a taste that was memorable. Actually, quite blah. Maybe it was the cheese that turned me off. Oh well, I'm stuck with another loaf. I won't toss it but definately won't make this again. To each his own I guess.

Spinach and Leek White Bean Soup

I followed this recipe with the exception of adding a third can of broth. I wasn't that crazy about it although my wife liked it. I think it was because I thought the cumin sort of over powered this soup. I made a different version titled "tuscan bean soup" that I tought was much better and I'll go back to. (see 500 Best-Ever Recipes Mediterranean by Beverly Jollands)

Challah I

My 13 year old daughter and I made this for the first time ever making a bread. We both had a blast and we thought it came out great! We gave our neighbor the other loaf. All of us agreed, it's a definite keeper! I thought it was too dense but was told we over-kneeded ithe dough. We'll cut back next time and add golden raisins.

Sausage Potato Bake

It didn't last very long. First word was Yum! I added some fresh brocolli, sliced carrots and canned corn as others noted. I baked it for about 1-1/2 hrs with the last 15 minutes not covered (to lightly brown). Served it with french bread. It was easy to prepare, very good and family members really enjoyed it. It's a keeper.

New Year's Day Black-Eyed Peas

This is definately a keeper! I soaked the peas overnight and thanks to another review, I used 4 cups of water. I also added about 8 shakes (maybe 2 tbls) of Franks Red Hot to give it some pizazz. This was my wifes first taste of black eyed peas and she said "you're onto something." It's all good.

Gourmet White Pizza

I tried this based on the rave reviews. Frankly, I was disappointed. Although I did alter the recipe by adding artichokes, fresh basil and sliced tomatoe on top. I used fresh garlic and it over powered the taste. I had reservations about the alfredo sauce but since everyone else said it was wonderful, I went along with it. I also used Sicilian style pizza crusts from GFS. I agree with the New Yorker! Next time I'm going with my gut instincts.
