Banana Banana Bread

Easy and adaptable! I used 4 bananas, one cup flour, and one cup of low carb bake mix - turned out great! Next time I will maybe try all low carb bake mix and Splenda, or half sugar half Splenda.

Pork Tenderloin with Creamy Herb Sauce

My husband and I aren't huge fans of meals based around pork - but this sounded like a winner - and indeed it was! Will make again! Like other reviewers I added more liquid / seasonings to create more sauce.

French Silk Chocolate Pie II

Yummm! I just made this with the following modifications to make (sugar free) Mint French silk pie : I simply subbed the sugar for Splenda, and subbed the vanilla for mint extract. Based on other reviewers recommendations I doubled the cocoa powder. Also possibly due to using Splenda there was no need to beat for 5 minutes after each egg - I beat for no more than 2 minutes. Turned out perfectly, smooth, fluffy, and delicious! Thanks! additional note - used this with "Graham Cracker Crust I" from this site (also made w/Splenda) and simply put the crust in the bottom of a 8x8 pan for more like a bar - very easy!

Bacon Mushroom Chicken

Really good and also really very easy! I made this with boneless skinless chicken breasts, so I reduced the time to probably about a half hour and then a few minutes with just the chicken and bacon under the broiler. I added extra mushrooms, and added pepper. To the pan drippings and mushrooms along with the cream I added some parmesan as well. Will definitely revisit this dish!

Graham Cracker Crust I

Just like it says! I made this reduced carb by using half graham cracker crumbs and half almond meal, and also replaced Splenda for the sugar. Turned out very well, tasty and crisp!

Mushroom Cube Steaks

Like another reviewer mentioned, I've pretty much only pan fried these before with just S&P - so this was a great, fast, & easy alternative. Since I wanted to use it up I added some zucchini and also bell pepper in with the mushrooms. Nice one pot meal!

Scrumptious Strawberry Shortcake

Everything has already been said! Wayyyyyy good! I ommitted the cream of tartar, scaled to 3 tsp baking soda, and made the dough into 12 rounds. Tastes just like I imagine a shortcake should - like cake and shortbread crossed!

Chocolate Chip Cookie Dough + Cupcake = The BEST Cupcake. Ever.

Excellent! I used a reduced sugar Devils Food Cake mix, pre made choc chip cookies, and reduced sugar choc fudge frosting. For a family get together - went over extremely well and no leftovers! So easy using the premade stuff! Next time will use the PB cup cookies!

Yum Yum Yum!!! I knew these would be fantastic when I tasted the crust alone and it was so tasty! I made them for a family get together and there were none leftover! Definitely will make again! Hmmm - maybe with PB or butterscotch chips!

Chicken Pot Pie IX

This was great! With some modifications to make it more carb friendly! I didn't have peas on hand so I just used more carrots and celery. I used more seasonings as recommended by others (garlic & onion powders, more pepper). For the crust, since they are carb unfriendly, I made a mixture from low carb bake mix and spread it on top and baked it the same as in the instructions. Will make again for sure!

Spinach Muenster Quiche

Excellent side dish! Easy to make and very adaptable! Love spinach and love muenster! I had one pkg of spinach so I halved everything, and actually used less than half of all the cheese and it was still very cheesy. I think next time I make it I'll throw it in a prebaked crust!

Simple Whole Roasted Chicken

Before making this I butterflied the chicken for later ease of cutting and also faster baking. I found this recipe before making dinner so I used these seasonings but didn't marinate. Turned out the most moist baked chicken I've ever made! Since it baked faster I did 500 for 15 min then 425 for about 30 more.

Tofu Parmigiana

A new mainstay tofu dish for my family! I did Italian seasoned soy flour, then egg, then flax meal & parmesan breading, baked at 400 for about 22 minutes w/ one flip, sauced & cheesed, baked for about 20 min... really easy and yummy! Always glad to find tasty tofu meals to keep in rotation!

Eggplant Parmesan I

A delicious way to use the abundant summer eggplant! This recipe seems to be pretty flexible with amounts and substitutions of everything. I think I used more eggplant than called for, used cottage cheese instead of ricotta, colby jack instead of mozzarella, and added an additional egg. Substitutions were because of what I had on hand.

Clark's Quiche

Excellent, and seems pretty forgiving - as far as changes. I used a pound of frozen spinach and didn't really drain it, just used a little less other liquid (half & half). Also, used a lot less cheese, didn't have ham or onion, and used 9 eggs. Also I baked the crusts for about 20 min first. Nice to have one waiting in the freezer now!
