Scrumptious Strawberry Shortcake

Everything has already been said! Wayyyyyy good! I ommitted the cream of tartar, scaled to 3 tsp baking soda, and made the dough into 12 rounds. Tastes just like I imagine a shortcake should - like cake and shortbread crossed!

Mushroom Cube Steaks

Like another reviewer mentioned, I've pretty much only pan fried these before with just S&P - so this was a great, fast, & easy alternative. Since I wanted to use it up I added some zucchini and also bell pepper in with the mushrooms. Nice one pot meal!

Graham Cracker Crust I

Just like it says! I made this reduced carb by using half graham cracker crumbs and half almond meal, and also replaced Splenda for the sugar. Turned out very well, tasty and crisp!

Bacon Mushroom Chicken

Really good and also really very easy! I made this with boneless skinless chicken breasts, so I reduced the time to probably about a half hour and then a few minutes with just the chicken and bacon under the broiler. I added extra mushrooms, and added pepper. To the pan drippings and mushrooms along with the cream I added some parmesan as well. Will definitely revisit this dish!

French Silk Chocolate Pie II

Yummm! I just made this with the following modifications to make (sugar free) Mint French silk pie : I simply subbed the sugar for Splenda, and subbed the vanilla for mint extract. Based on other reviewers recommendations I doubled the cocoa powder. Also possibly due to using Splenda there was no need to beat for 5 minutes after each egg - I beat for no more than 2 minutes. Turned out perfectly, smooth, fluffy, and delicious! Thanks! additional note - used this with "Graham Cracker Crust I" from this site (also made w/Splenda) and simply put the crust in the bottom of a 8x8 pan for more like a bar - very easy!

Pork Tenderloin with Creamy Herb Sauce

My husband and I aren't huge fans of meals based around pork - but this sounded like a winner - and indeed it was! Will make again! Like other reviewers I added more liquid / seasonings to create more sauce.

Chicken Pot Pie IX

This was great! With some modifications to make it more carb friendly! I didn't have peas on hand so I just used more carrots and celery. I used more seasonings as recommended by others (garlic & onion powders, more pepper). For the crust, since they are carb unfriendly, I made a mixture from low carb bake mix and spread it on top and baked it the same as in the instructions. Will make again for sure!

Chicken Enchilada Casserole II

Laura's Quick Slow Cooker Turkey Chili

Very good and easy! Used ground chicken, replaced one can of soup with a can of tomatoes w/green chiles, and only used one can of (black) beans. Excellent flavor! Also, in my opinion not too spicy - just a good spice!

The Best Zucchini Fritters Ever

A great option for zucchini variety! I made this low carb friendly by substituting the regular flour with 1/2 cup of soy flour and 1/2 cup of almond meal. Worked very well, and quite tasty!

Satiny Chocolate Glaze

Good not great. Like other reviewers have commented, it's really not a "glaze" - more of a frosting as it is thick. Also, not that it needs to be, but not "satiny" like the name implies.

Too Much Chocolate Cake

Like a lot of previous reviewers I thought this cake would be a shoo-in with all the rave reviews. While it wasn't a terrible cake I thought it was quite bland and the only reason I finished my piece was because of the ice cream and Satiny Chocolate Glaze along with it. Otherwise too boring to be worth the calories.

French Toast Casserole

Better than regular french toast! Seems to be a "forgiving" recipe! I just half measured everything as I scaled it down to less servings. Put it all in a smaller pan, mixed it up so the bread all got saturated and baked it at 375. It got nice and a little crispy on the outsides but baked all the way through. Definitely will make again - extremely good!

Asian Lettuce Wraps

Very tasty indeed! and very easy to adapt! Changes made (because of what I had/or not on hand) were to use ground pork, ground ginger, omit water chestnuts, omit hoisin, add chopped mushroom, add beansprouts, and red pepper. Also, I didn't set the meat aside, rather added sauce and veggies to it while cooking - just a little easier!

Greek Pasta Salad I

This recipe is great and versatile to mix & match. I used whole wheat rotini pasta, feta cheese plus quartered mozzerella balls, used roasted red pepper instead of regular, and next time will also try adding artichoke!

Barlow's Blackened Catfish

This turned out great & spicy, although I had to adapt the cooking method somewhat. I used catfish nuggets that were previously frozen. While cooking in the pan they didn't blacken at all I think because there was too much liquid from being frozen. So I put them in the oven awhile and then after put them back in the pan stovetop and fried them up crispy. Nice & Spicy!

Spinach Quiche

Love Spinach Quiche!!! This recipe is very forgiving! I didn't have Feta on hand and so ommitted it and it was still fantastic!!! One time making this I prebaked the previously frozen piecrust for about 15 min and that seemed to help it stay crisp.

Corn Casserole I

Made this in a 9x13 dish for the allotted time a day ahead of time to go with enchilada casserole. Just reheated it in the oven the next day and turned out great! Next time I probably will add more spices, chili powder, red pepper, etc.
