Good and very adaptable. I followed the recipe and then put it in the crockpot for a party we were having later. It was great, and reheated in a frying pan very well too!

Banana Banana Bread

Easy and adaptable! I used 4 bananas, one cup flour, and one cup of low carb bake mix - turned out great! Next time I will maybe try all low carb bake mix and Splenda, or half sugar half Splenda.

Lemon Cake with Lemon Filling and Lemon Butter Frosting

This turned out beautifully! I made it in a bundt pan, 350 for about 50 min, so that I could cut it into more than 12 pieces easily. Since it could end up a disaster, I cut it into 3 layers - using the lemon curd on the 2 inside layers and all the frosting on the outside. I added a few drops of lemon food coloring - it was for my 2 year old son's birthday, and he asked for a "yellow cake"! Maybe because it was a bundt I had more than enough frosting, and it was quite sweet!

Wilted Spinach Salad

Very tasty and easy! Although for how easy it was, I was surprised at how messy it made my kitchen! (just a side note!) I thought it was a tad on the sweet side, will cut out more sugar next time and then it will be a 5! thanks!

Very adaptable and delicious! I added some ground flax meal and dried onions, and omitted the sugar from the sauce - still quite sweet enough. Will make again.

Clark's Quiche

Excellent, and seems pretty forgiving - as far as changes. I used a pound of frozen spinach and didn't really drain it, just used a little less other liquid (half & half). Also, used a lot less cheese, didn't have ham or onion, and used 9 eggs. Also I baked the crusts for about 20 min first. Nice to have one waiting in the freezer now!

Eggplant Parmesan I

A delicious way to use the abundant summer eggplant! This recipe seems to be pretty flexible with amounts and substitutions of everything. I think I used more eggplant than called for, used cottage cheese instead of ricotta, colby jack instead of mozzarella, and added an additional egg. Substitutions were because of what I had on hand.

Tofu Parmigiana

A new mainstay tofu dish for my family! I did Italian seasoned soy flour, then egg, then flax meal & parmesan breading, baked at 400 for about 22 minutes w/ one flip, sauced & cheesed, baked for about 20 min... really easy and yummy! Always glad to find tasty tofu meals to keep in rotation!

Simple Whole Roasted Chicken

Before making this I butterflied the chicken for later ease of cutting and also faster baking. I found this recipe before making dinner so I used these seasonings but didn't marinate. Turned out the most moist baked chicken I've ever made! Since it baked faster I did 500 for 15 min then 425 for about 30 more.

The Best Meatballs You'll Ever Have

Extremely easy, tasty, and adaptable. I omitted the croutons and onions - I avoid bread products, and didn't have onion. I added about 2 TB of parmesan. Baked at 375 for about 20 minutes before tossing in with sauce and sauteed peppers. Will make again soon!

Pizza Pinwheels

I used seamless dough sheets, included sauce in the layering, rolled them up and chilled in the freezer for awhile - that helped a lot. Cut them into about one inch thick sections and baked for probably 20 minutes, until they were browned. I think these would be good with sausage.

Tender Beef Brisket

This was "tender" true to its name. However, I found it to be too far on the sweet side for my taste. That was without adding the sugar! If I were to make this again I'd use less ketchup, no sugar still, and add more horseradish - couldn't taste it at all!

Spinach Muenster Quiche

Excellent side dish! Easy to make and very adaptable! Love spinach and love muenster! I had one pkg of spinach so I halved everything, and actually used less than half of all the cheese and it was still very cheesy. I think next time I make it I'll throw it in a prebaked crust!

Yum Yum Yum!!! I knew these would be fantastic when I tasted the crust alone and it was so tasty! I made them for a family get together and there were none leftover! Definitely will make again! Hmmm - maybe with PB or butterscotch chips!

Chocolate Chip Cookie Dough + Cupcake = The BEST Cupcake. Ever.

Excellent! I used a reduced sugar Devils Food Cake mix, pre made choc chip cookies, and reduced sugar choc fudge frosting. For a family get together - went over extremely well and no leftovers! So easy using the premade stuff! Next time will use the PB cup cookies!

Scrumptious Strawberry Shortcake

Everything has already been said! Wayyyyyy good! I ommitted the cream of tartar, scaled to 3 tsp baking soda, and made the dough into 12 rounds. Tastes just like I imagine a shortcake should - like cake and shortbread crossed!
