Stuffed Jack-O-Lantern Bell Peppers

Pumpkin Chip Muffins

This was very good. I too followed the advice of others and only used 1.5 cups sugar, 1/2c oil and 1/2c apple sauce, and added 1tsp pumpkin pie spice. I only cooked them for 14 mins, and they were still a little overdone, so next time I think I'll try cooking at 375 degrees. Delicious.

Zucchini e Pomodori Gratinati (Zucchini and Tomato Gratin)

Excellent dish! I served it as a main dish. Sliced some rosemary and olive oil focaccia, brushed with olive oil and broiled, and served the gratin on top of the slices. Delicious!!

Fluffy French Toast

Kids loved it. I used Texas sliced bread for a thicker toast, and it turned out perfect. Not soggy, just soft. Sprinkled a little powder sugar on top and syrup. Delicious!

Baked Maryland Lump Crab Cakes

I made according to directions, and it was good, but was too runny and tasted eggy. Next time I'll try using 2 eggs instead of 3/4 c egg substitute and a little more bread crumbs.

Feta Artichoke Dip

Maple Twists

These were easy to make and turned out good. I didn't dump them upside down on a plate immediately after taking them out of the oven, so had a little trouble getting them out of the pan. The syrup/brown sugar mixture was too sweet for me, so may try skipping that next time, and just topping with a little powdered sugar after baking. Still a great, easy recipe.

Upside Down Chicken Rice

Made this last night and turned out great. I used olive oil and 3 large boneless, skinless chicken breasts, and cut the recipe in half. Cut chicken into pieces after boiling. Also used green bell peppers instead of carrots, since I was out. Just sauteed them with half a large onion before adding the cut chicken. Topped with toasted almonds to cut out oil. Excellent, and kids loved it.

Mini Sweet Potato Pies

Made these last night and turned out great. I used a basic pie crust recipe and regular size muffin pans and had about 18 mini pies, which could have easily been 24 if i had any dough left. The kids, 5, 7 and 9, loved them and so did I. Very easy and delicious, especially with a little whipped cream on top. :)
