New England Clam Chowder I

Great starter! This is what I did different as per our taste and what I had on hand.... I used 3 cans of minced clams and 1 can of whole baby clams, 3 cups clam juice in place of water (2 from draining clams and 1 bottle), I did not peel my potatoes, diced them up rather small and covered the pot til they were done, I added basil, old bay, thyme and garlic... thickened just a little with instant potato flakes (didn't measure, just added a little at a time until it was where we like it). This was very good, with 4 of us there was very little leftover (maybe 1 serving). I served this with sourdough bread.

Baked Potato Soup

This recipe is very good! I did make some minor adjustments according to our preferences. I doubled the recipe, did not double the basil, added thyme and added extra potato (I do not peel the potatoes, I microwave and dice them). I did not add the hot pepper sauce. I have a canister of dehydrated onion, red pepper, garlic and parsley that is made for home fries so I added some. This so good and filling! I double so we can have some for lunch! Hubby and kids (teenagers) devoured this soup! I served with crusty french rolls. We are very big believers in sitting together for supper, which is not always easy these days! My gang is also very used to homemade meals. Thank you for sharing this recipe Kristi T, whoever said it was tasteless and they were embarrassed to serve it must have done something wrong because it was chock full of flavor!

Healthier Beef Stroganoff III

WOW!! This was really tasty and really easy to make!! The only thing I did different was I added garlic (yeah, no vampires in my house! lol) and I didn't use the white wine but only because I didn't have any on hand! I also used wafer steaks because it's what I had on hand (not the pressed steak-ums)... My teenagers and I have doing Weight Watchers+, hubby refused til he ate this! :D Nice job on the healthy version!!

DHs mom makes a similar recipe that he always loved, he prefers this one! Says it's better than his moms! I followed the recipe exactly as written (I try to do that before tweaking most of the time) and it needs no changes for us!

Eggs Benedict

I make this exactly as written (maybe reduce the lemon a tad if you don't like your lemon too strong but my gang loves it as is)... my toaster has a warming button so I toast all my muffins then reheat as I go, I do not butter my muffins, plenty of butter in the sauce (I use spray butter for the gang)! The kids and the hubby literally lick their plates clean! I do wish I could make the sauce without so much butter without sacrificing the taste! This is definitely one of those "treat" brunches that could kill you if you make it too often! ;0)

Oatmeal Raisin Cookies I

The only things I did different was I used 1/4c less white sugar and I soaked the raisins for 30 minutes in hot water with a little vanilla added... these are perfect! The less sugar is strictly a personal preference and doesn't reflect on how good this recipe is as written (my kids tell me good ol' water is too sweet for me! lol)!

Honey Curried Roasted Chicken and Vegetables

This is my first ever review of a recipe...had to do this one though! The only changes I made were 1) I added a lightly sauteed onion to the veggies and 2) I cooked the veggies separate from the chicken (did not boil the veggies, baked instead) until the last 20 minutes of cooking, when adding the sauce! I gave 1 star per person who gave a thumbs up! My family devoured this! My fiancee' was the one who said I should rate this recipe, called it a definite keeper! Amazingly, out of 3 kids not a single complaint! Oh, after I drained the drippings from the chicken I separated the fat from the broth and used the broth (plus a little chicken base and water) to make rice! Fantastic!
