Pumpkin Cake III

Super moist and just the right amount of pumpkin. To be a fair reviewer, I followed the recipe as written and it was great. I did top it with a cream cheese icing.

Best Bean Salad

This is great. I used red wine vinegar and it gave it the extra zing the salad needed. A keeper for sure. This saves well and serves many.

Easy, Speedy Corn Muffins

So simple and delicious. I love the consistency of this muffin. My 3 year old daughter "made" them for dinner. I omitted the brown sugar just because I thought the mix would be sweet enough for us. I was right, but the brown sugar might be right for some.

Baked Haddock

this was great! I followed the recipe almost exactly, just cutting down on the butter and thyme. The fish was so flaky and crispy. The high heat did really well. Next time, I will eliminate the thyme altogether, but that is just a personal preference. I think any spices would be great (garlic, onion, Old Bay, etc). Any mild fish would work too. Really good base recipe that you can tweak to your liking.

Slow Cooker Beef Stew I

I followed this recipe exactly except for adding 1 can of French Onion soup (liquid) in the last half of cooking. It was delicious! I did not mess up any pots (except the crock pot itself) and I love that. I just eyed the spices/flour but my gravy was thick and brown and just perfect. So easy to make and forget!

Easy and Delicious Chicken

I would not make this again. It was just OK but nothing I am looking forward to eating a second time. I did not like the thyme personally. We ate it over angel hair pasta and it is across between tetrazini and alfredo.

Strawberry Bread

Wow. This was a great way to use fresh strawberries. I used the recipe as written as a base. I added more strawberries, a little vanilla flavoring, and decreased the oil to 1 cup then added 2 small jars of straw/banana baby food. The baby food is the trick. I have been using it in banana bread and it really adds flavor and moisture. Try this bread. It is delicious!

Millionaire's Cake

This was a really good doctored cake mix recipe. I made 2 9 inch cakes. I omitted the walnuts. I used the drained pineapple juice as water in my cake mix for added flavor. It was a huge hit at my husband's birthday. Very light and fluffy. Worth a try if you like easy, cake mix type desserts.

Beef Bourguignon II

Wow this was a great way to serve a cheap cut of meat. I followed the recipe for the most part. I added about 1/3 cup of sour cream the last 20 minutes to thicken the liquid and make a creamy sauce. It was delicious over noodles. Loved it!

The Best Bean and Ham Soup

This soup was surprisingly good. Even though I'm not a big bean fan I still enjoyed it. I followed the recipe with one exception, I used 1/2 chicken stock and 1/2 water and this cut down on the saltiness. Definitely worth a try if you have a leftover ham bone.

Easy Spinach Lasagna with White Sauce

No one in my house liked this at all. I followed the recipe, and used Sundried Tomatoe alfredo sauce. It was just not good. Too rich and the spinach was too much. I definitely will not make again.

Jen's Jambalaya

This was delicious. I took a short cut and used 1 can of Hunt's tomatoes w/ celery, green pepper and onion. It was super easy, considering I used left-over smoked sausage and shrimp from a low-country boil. I cooked it down for more than 20 minutes so it was not soupy. Definitely a keeper.

Szechwan Shrimp

So quick and easy. The only thing that took any time was peeling the shrimp. I added some steamed brocolli after the shrimp, before the sauce, and let it simmer. Delish!
