this was great! I followed the recipe almost exactly, just cutting down on the butter and thyme. The fish was so flaky and crispy. The high heat did really well. Next time, I will eliminate the thyme altogether, but that is just a personal preference. I think any spices would be great (garlic, onion, Old Bay, etc). Any mild fish would work too. Really good base recipe that you can tweak to your liking.
