Garlic Yeast Bread

I also had to make some modifications because I don't have a bread machine. I substituted olive oil for the butter or margarine. I baked the bread for 25 minutes at 350 degrees but it was slightly underdone. Next time I will increase the temp to 375.

Tuna Broccoli Roll Up Casserole

I looked up a tuna recipe that wasn't a noodle casserole or a salad and found this. I substituted frozen mixed veggies as I didn't have any broccoli. It came out great and was a big hit with my family!

Lasagna Alfredo Roll Ups

Very good recipe! I followed the directions to a T. The only issue was the amount of work. I was exhausted after making them. And it was pretty messy. But worth it!

Cocoa Oatmeal Cookies

At altitude I had to cook these cookies about 15 minutes. They were good but I think I'll chocolate chips next time.

Pumpkin Cookies I

I have another pumpkin cookie recipe that I make during the holidays but since I had a leftover can of pumpkin I decided to try something new. I added a little extra flour and cooked them the whole 15 minutes for altitude (approx 5400 ft) and they came out great. The never did brown but the cookies seemed done. They are soft and chewy and go great with a glass of milk. My boys love them!

Ropa Vieja

I absolutely love this recipe as does my whole family. I've never had a roast come out so tender. And the whole house smells wonderful. I use a slow cooker and we usually eat this with tortillas and refried beans.

Michell Jenny's Challah

This was my first time baking a yeast bread other than pizza dough. I don't have a bread machine so I used directions from other challah recipes to combine ingredients and let the bread rise. The bread came out great and my family loved it. I will definitely use this recipe again.
