Apple Chicken Quesadillas

We enjoyed the recipe. We had leftover filling and we used that the next day to make omelets. I took others advice and diced the apples and added a lot more cheese. I used a tortilla on bottom and one on top then cut them into 4 pieces. We had the chicken falling out from everywhere so from now on I will definitely use the folded tortilla method because it holds the filling in a lot better while you eat it.

Sausage Apple Quiche

Very good. My family loved it! I have a 5 year old and 2 year old who don't hardly like anything and they were sneaking pieces of the leftovers. I cut the sausage up so I could have enough for two quiches and there was sausage in every bite. I also sprinkled a little cheddar cheese on top. We will definitely be using this recipe again.

Spanish Flan

I loved this recipe. I decided to use this recipe since it seemed easier than the rest. I followed other suggested suggestions and used 1 extra egg and added cinammon. I also put some vanilla in my sugar after it melted down. I used a water bath by placing it onto a cookie sheet filled with water. I ran out of foil so I placed another cookie sheet upside down on top of the flan. Its's a trick I use whenever I run out of foil and it works great every time. This was my first time making flan and I expected it to be complicated but it was so much easier than it seems. I plan to keep using this recipe.

Soft Mahi Mahi Tacos with Ginger-Lime Dressing

Very Good! Even my kids liked it and they are 5 and 2. Next time we are going to try sweetening up the sauce or using yogurt instead of sourcream but I think I'll like it better as is.

Honey Fried Chicken

Me and my husband loved it! I added italian flavored bread crumbs to the flour to make it a little more crispy. I would also suggest using boneless chicken breast that way you can cut it into small pieces that cook faster making it really hard to burn the outside. Make sure the oil isn't super hot and if it gets too hot while the chicken is cooking just turn the stove off for a couple minutes. I didn't burn a single piece and we plan to use this recipe again and again.

Stuffed Leg of Lamb with Balsamic-Fig-Basil Sauce

We loved this recipe. We live in a small country town and there was no lamb or figs near so I had to substitute. I used sliced pork sirloin roast and cherries instead of currants. I doubled the plum filling recipe so that I could have enough to put inbetween every slice. I had no string so I put the stuffed roast inside of a meatloaf pan and covered with foil. It was so good with the pork we can't even imagine how great it would be with lamb. I ordered a lamb online and can't wait to make it again. Hands down we agreed it was the best dish we've had in months.
