Duck Adobo
was really good. I used chicken thighs and cooked them for about 1 and 1/2 hours. I did add a 1/2 teaspoon ground ginger. My 9 year old came in the kitchen about once every 20 minutes to tell me how good it smelled and to ask if it was ready. And, my 7 year old said he had gone to chicken heaven.

Burrito Pie
i have some very slight variations of this recipe. I use the super size yellow or white corn tortillas. I make my own refried beans (hate the can kind) and i spread the beans on the tortillas (like i would peanut butter)instead of mixing it with the meat and i sprinkle the olives on top of the casserole. sometimes i put shredded lettuce, sour cream (the mexican 'creme' kind) and tomatoes on top after it's done cooking. kids and grown ups always love it :)

Tater Tot Casserole II
very good. I used cream of chicken and cream of mushroom, mixed it with the ground beef and the seasonings then added the cheese and the frozen tater tots. The whole family loves this recipe
