Herb Roasted Pork Loin and Potatoes
This was a great base recipe. I did sear it first and then cooked my 2lb roast for approx. 50 min. Because of this I put my parboiled potatoes (and carrots) in right at the beginning with the roast. I think it would have been better with some type of gravy though.

Caramelized Baked Chicken
I used this recipe as a glaze for boneless skinless chicken. I followed another reviewer's suggestion and cooked the sauce on the stove with a little cornstarch. I also added hot sauce. I then coated the chicken and baked on 375 for 30 minutes. I would recommend going for 40 minutes next time, covering for the last 15 or so because my glaze did start to burn.

Stuffed Mexican Peppers
This recipe was great. I used ground turkey and brown rice. I also added in some mexicorn and black beans for a Tx-Mex feel. I was out of tomato sauce so I used canned tomatoes and some salsa.
