Bread Machine Thin Crust Pizza Dough

Reviewed: Jun. 25, 2014
Bread flour=crispier crust (thank you Bobby Flay). Shape dough by hand, learn from this vid: http://www.instructables.com/id/Dealing-With-Pizza-Dough/. My first attempt @ shaping pizza dough by hand was a success...following this method coupled w bread flour makes a light yet crisp crust which creates a truly gourmet, restaurant quality pizza. Dough MUST be sticky...should stick to your hand like the sci-fi Blob movie. We cut the dough in half and use the other half for another pizza a few days later or for breadsticks. Applying T. italian seasoning, T. shredded parmesan, 1/2 tsp garlic powder & 1/2 tsp oregano during prebake is essential imo. Docking (putting little holes all over dough w fork) should be done prebake too.

Popcorn Seasoning

Reviewed: Jun. 25, 2014
added a touch of lime juice, cinnamon & sugar, then microwaved it all w kernels in brown paper bag. Drastically reduced the quantity of spices bc going on one batch of popcorn. Omitted yeast and celery bc the other flavors lean toward Indian cuisine.

Lemon Sugar Tea Cookies

I doubled the lemon extract; next time I'll triple it. I added a couple drops of yellow coloring to the batter and made yellow lemon flavored sugar to roll them in. Wonderful!

Easy Potato Cheese Soup

Reviewed: Feb. 8, 2013
Loved it. I used just enough chicken broth to cover the veggies. Removed some of the soft veggies from the pot and then blended. I also added a few pieces of velveeta queso cheese slices. I used 2% milk.

Refried Beans Without the Refry

Reviewed: Dec. 5, 2012
so good. never going back. i use dried black beans bc we just prefer black. I freeze the remainder in a thin layer so we can just break off however much we need for a quick meal. Each batch lasts our family about a month. Talk about economical and the best tasting beans ever!

Playgroup Granola Bars

Reviewed: Jun. 3, 2012
Fantastic! These are well received by all when I take these to a function. I use less honey, no wheat germ, and replace the raisins with chocolate chips. I bake mine in a smaller pan that goes in my convection oven toaster so they are somewhat thicker. I bake them for 20 minutes then cover will foil and bake 20 minutes more.

Best Fried Green Tomatoes

Reviewed: Aug. 22, 2011
Oven fry by using a spraying veg. oil and baking at 400 for 45 mins, flipping them half way through. This recipe is really good and authentic just as written. (I live in Alabama!) This is the recipe I follow except I let my tomato slices marinade in buttermilk for a couple mins and omit the eggs entirely. Tip: Replacing the bread crumbs with panko bread crumbs or using all panko to batter in makes for incredible fried green tomatoes.

Use this batter to bake in muffin tins for 30 mins. Less mess (no cutting a loaf of bread). Top each one with brown sugar, maple syrup n nuts that have been microwaved for 2 secs.

Paul's Pumpkin Bars

Reviewed: Oct. 29, 2010
This recipe would make fabulous mini pumpkin muffins. I threw in some semi sweet choc morsels and didn't use a frosting. These were wonderful.

Baked Potato Soup

Reviewed: Oct. 17, 2009
Love it. Exactly what I was looking for. I changed it somewhat based upon what I had: (used 5 pieces of bacon & all its grease, 5 red potatoes, 1 celery stalk, 3 gloves garlic, 1.5 onions, heaping tablespoon sour cream, and just used regular milk). I used a hand held blender to puree most of the soup and potatoes. I reserved two chopped baked potatoes to add after having pureed soup.

Crustless Spinach Quiche

Wonderful. I cooked mine in muffin tins as suggested by another reviewer. If your pans are non-stick, cook at 325 degrees. I just used up all different kinds of cheese I had in the house. Tasted great, mmmm.

Quick and Easy Brownies

Reviewed: Aug. 6, 2009
Fantastic. These are now MY brownies. For just a little extra uuummph, I add a handful of semi-sweet chocolate chips, chopped pecans, and a ribbon of caramel. Turtle brownies! You can make the caramel while putting all of the ingredients in the mixer. 13 caramel candies + 2.5 oz evaporated milk: microwave on low stirring occasionally until bubbling.
