Best Ever Caramel Apple Crisp

I love this version! It's adaptable to larger and smaller servings as needed, and you really can't go wrong if you add more caramel or apples as you like. I use medium-sized Granny Smith apples, use a premade caramel sauce, and pour the sauce both over the apple mixture and the topping. Didn't think anything could replace my family's peach cobbler for best fruit dessert recipe ... but this does!

Chuck's Favorite Mac and Cheese

I love this version! I've made both straight and with modifications, and this now the only mac-and-cheese version I use. The cottage cheese is a great substitute for eggs (which I hate in my mac 'n' cheese) and I was never a fan of wholly creamy versions. This gives me crunch and body without dousing the poor pasta in God-awful, Velveeta-style sauce. Such a great recipe!

Christmas Brunch Casserole

I liked this "as is" but loved it once I made modifications. I feel this is a great "foundation" recipe, so the more or fewer things one adds to personalize the casserole the better. I used one more egg than called for along with egg white; used only half the amount of bacon and substituted sausage, which I cooked with green pepper, onion, and garlic in the bacon grease; added paprika and cayenne pepper; and used both a sharp cheddar and cheddar jack mix. I loved that I can prep this the night before and it still came out great. Thanks for posting the recipe!

Best Big, Fat, Chewy Chocolate Chip Cookie

I'd give it five stars but I ate the last one. :-) I've made cookies using this recipe 3 times now. I've found that I've had to reduce the flour and boost the butter a bit for my liking. The baking time tip made these wonderful - my stove is so old that Methuselah would tell me to get rid of it - but at 325D for 20 minutes these came out perfect. This recipe makes it easy to add what you want - and I usually want toffee, white chocolate chips, and walnuts in addition to chocolate chips or chunks. :-) Thanks for a winner!

Cranberry Sauce

I love this recipe as a base for cranberry sauce. You can add anything else you'd like - jalapenos, cherries, strawberries, cream, etc. - to make this any way you'd like. You can decrease the sugar, substitute water for orange juice, whatever you prefer as well with this one. I love it and will keep it!

Incredibly Cheesy Turkey Meatloaf

I love this recipe as an alternative to beef/pork versions of meatloaf, but I do agree with some of the other reviewers that it could be more flavorful. Since I have an allergy to tomatoes I always have to find other ways to substitute tomato; and that's usually to boost the seasoning. So I added onions, Worchester sauce, grated Parmesan cheese, and garlic powder; but reduced the milk to just 1/2 cup (my personal preference). You can use cheddar if you don't have Colby and the recipe will still turn out great. Thanks for posting!

Brooke's Best Bombshell Brownies

I've made these brownies twice and the 2nd time was the charm. The amount of sugar in this is incredible ... the first batch made following the recipe "as is" created too-sweet brownies we couldn't finish. The 2nd time, however, I cut the sugar in half, added walnuts and butterscotch chips to the chocolate chips and kept everything else the same. They were fantastic! This recipe is a great base and I love that it's flexible enough to allow for less sugar and still be superb.
