Spicy Buttermilk Fried Chicken

I doubled the spices in this recipe to make it to my taste level. Double the tabasco in the milk as well. It turned out really delicious. One thing to note is that you don't need salt in the flour mix since you salt the marinade. The chicken soaks it up and when you fry it, the salt rises to the skin. so yummy!

Baked Potato Soup V

Only made 2 minor changes and this turned out awesome. I did 4 cups milk & 2 cups broth, and added 1/4t dried Thyme. Turned out so good and hearty!

Apple Pie by Grandma Ople

Great apple pie! It looks and smells amazing, and tastes even better. I hate apple pie, but even I like this one. The apples were crisp and tart compared to the caramel filling. My boyfriend had his doubts but not after he took a bite.

Speedy Spaghetti

I used ground turkey to cut down on fat and used low sodium chicken broth instead of water to add flavor since the turkey can be a bit bland. I also added a teaspoon of minced garlic, and 1/2 t oregano & rosemary just because I love it. Be careful to not oversalt if you use broth though. Everything else was the same as the recipe and it turned out amazing! My boyfriend could not tell it was turkey which was the goal. This is now my go to recipe for spaghetti.

Szechuan Spicy Eggplant

Great flavor in this dish. Also very quick and easy to pull together for an impressive dinner. I used Japanese long skinny eggplant, and pork strips because that is what I had available and it was over the top for flavor! I doubled the sauce mixture also because I served this over rice and I wanted the extra sauces. Great recipe, very authentic.

Spicy Indian Chicken and Mango Curry

The recipe is a good base, but I had to add a few other items to make it flavorful. We added yellow peppers, chili sauce and curry powder to give it more flavor and substance. I served over basmati rice and it was fantastic.

Chicken Breasts Pierre

Yummy! I followed the recipe exactly and only added sliced red peppers and onions to the recipe towards the end of cooking time. Served over onion barley and a side of green beans with toasted almonds. Delicious meal!

Gypsy Soup

Added some mushrooms, barley instead od chick peas, and some zucchini. Also doubled the broth to accomodate the extra stuff. The soup was good for a vegetarian treat. The flavors are unique. But i couldn't get full on this soup without bread on the side

Boscobel Beach Ginger Cake

I love this cake! I made it exactly as the recipe stated, no changes in anythign and it came out perfect! It's moist on the inside with a lovely caramel color crust on the outside, and the flavor is so good, not too spicy or overpowering. A perfect cake for those who don't want a sugar heavy dessert. Nice job!

Black Beans and Rice

This is a simple recipe for those of us who are trying to cut back on meat/fat consumption. I added a can of spicy ro-tel, a can of corn and 2 regular sized zucchini diced to make it a more hearty meal dish. Sprinkled with some mozzerella and a dallop of low fat sour cream, and it was a delicious healthy dinner

Chewy Coconut Cookies

Delicious! I made very few changes from the recipe. I doubled the vanilla, cooled the dough for 30 minutes in the fridge and rolled into golf ball size. I let them bake for about 13-15 minutes tille t hey were a light caramel color. and cooledo n a rack. Perfect cookies! crunchy outside and soft inside, yummy!

Irish Soda Bread V

Looks like a brick when it's taken out of the oven, but the bread has a great mild flavor that goes well with many hearty stews, or can be slathered with honey butter as a snack with a cup of tea. It's a very simple recipe. I like it and will be making again.

Potato Pancakes I

Needed to make some changes to make the recipe right, but other than that this is a good basic recipe for this dish. I added spices and blended everything in a food processor. Otherwise you just end up with hash browns.

Jalapeno Popper Spread

The men stood around the dish for the 20 minutes it took them to completely inhale every last bit of this dip. It's insanely good and authentic. My only changes just to be a little healthier, I did 1/2 cup mayo 1/2 cup sour cream, chopped 6 fresh jalpenos, omitted the greens chilies (don't like the flavor). I also added a little mozzerella cheese to the mixture for the stringy cheese effect. I've served with melba chips, french bread (untoasted) and club cracker dipping sticks. The bread is the best but it goes well with all three. Everyone loves this dip. It's a keeper for sure!

Garden Veggie Pizza Squares

Delicious! I double the recipe and add 1/2 cup mayo to it. I also use broccoli, cauliflower, red pepper, carrots, green onion and a small jar of black olives on mine. comes out colorful and tasty. There is never a single bite lefto f this pizza. Evryone loves it, even the kids.

Chocolate Eclair Dessert

Microwave the frosting for 30 seconds (or until runny), pour over your dessert as a final layer, and let sit in the fridge at least 2 hours. This is the best and easiest way to frost this, and it tastes wonderful. Everyone loves this dessert, and it literally takes 15 minutes to make.

Jefferson Davis Pie

Not sure if I did something wrong, because I only ended up with one pie, but if I did i'm doing it again cause it was delicious! The pie itself is quite good, with a crunchy crust and creamy center. It's sweet and fulfilling. I only used one pie pan/crust, and I had no spillage in the oven. I did also cover my crusts until the last 15 minutes, and they came out nicely browned. My only real complaint is that the presentation of the pie is not too nice. It doesn't exactly look appetizing, but once you take a bite, you're hooked.

Iced Pumpkin Cookies

Very good cake like cookie. I made very few changes for my tastes. I used 3 t of pumpkin pie spice because I did not have all spice on hand, and did 1 cup white & 1 cup brown sugar for the cookie since I think brown gives the cookie more depth of flavor. For the icing, I added a pinch of cinnamon for taste too. This recipe make a lot of cookies, I counted 56 cookies from 1 batch. Love this and will be making again real soon.

Crazy Cake

Easy to make, and the flavor of the vinegar really does not come through. Mine came out a bit dry though so I had to do a simple berry glaze to moisten it back up.
